Before you start

Before starting, ensure all ingredients are measured and ready to go. Drain and rinse the black beans thoroughly to remove excess starch. Have the shredded cheese ready to add at the final stage to ensure it is fresh and ready to melt. Clear your workspace to allow for easy access to the stove.

Confirm that the skillet is clean and that the lid fits properly, as maintaining a consistent internal temperature is key to perfectly cooked rice. Having everything prepped in advance allows for a smooth, stress-free cooking experience.

Ingredients at a glance (4)
  • 1 cup long grain white rice
  • 1 cup black beans
  • 1 cup corn
  • 1 1/2 cups shredded cheese

Instructions

Phase 1: Initial Combination

  1. Combine ingredients
Add the white rice, black beans, and corn to the stainless steel skillet. Stir everything together until well combined, ensuring the rice is evenly distributed to allow for even cooking.
Look for Ingredients are evenly mixed
Tip Using a wide skillet helps the rice cook more evenly than a deep pot.

At the end of this phase, the ingredients should be thoroughly stirred and distributed throughout the skillet. Ensure the rice is spread in an even layer across the bottom of the skillet to promote uniform cooking. The mixture will look ready for the liquid to be added, which is expected as the rice begins to hydrate.

Phase 2: Simmering and Steaming

  1. Simmer the casserole
Cover the skillet and simmer over medium-low heat for about 20 minutes, or until the rice is tender. Avoid lifting the lid frequently to keep the steam trapped inside for the best texture.
Look for Rice is tender and moisture is absorbed
Tip If the rice is still firm, add a splash more water and cook for another few minutes.

The casserole is ready for the final step when the liquid is mostly absorbed, leaving the rice fluffy and tender. You will notice that the rice has expanded and the volume of the mixture has increased. The corn and black beans should be evenly distributed and tender. Check the center of the skillet to ensure there are no pockets of dry rice before proceeding to the cheese melting stage.

Phase 3: Final Melting

  1. Melt the cheese
Remove the lid and sprinkle the shredded cheese evenly over the top of the rice mixture. Cover the skillet again for 2 to 3 minutes until the cheese is completely melted and bubbling, then serve immediately.
Look for Cheese is melted and pulling away from edges
Tip Turn off the heat before adding the cheese to prevent the bottom from burning.

The dish is complete when the cheese has transformed into a uniform, molten layer across the surface of the casserole. It should appear glossy and soft, with no unmelted shreds remaining.

The fragrance of the warm, cheesy rice should be apparent. Once this stage is reached, remove from the heat immediately to prevent the cheese from separating or the bottom of the casserole from overcooking.

Common mistakes

A common mistake is lifting the lid too often, which releases the steam necessary for the rice to cook through. This can lead to unevenly cooked grains that remain hard in the center. Another error is using too much heat, which can scorch the bottom of the rice before the top is cooked.

Always cook on medium-low heat to allow the rice to gently steam. Finally, ensure the cheese is added only at the very end; adding it too early can cause it to sink into the mixture rather than creating a beautiful, melted topping.

How to tell it’s done

The dish is done when the rice is tender but not mushy, and all the liquid has been fully absorbed by the grains. The cheese on top should be completely melted, bubbling, and slightly browned at the edges.

When a spatula is inserted, the mixture should hold together well, and you should be able to see the distinct layers of the rice, beans, and corn integrated with the melted cheese. If the bottom seems too dry, a small amount of liquid can be added, but generally, the moisture should be fully incorporated.
