Tips for success
To take the crispiness of the potatoes to the next level, ensure they are completely dry before adding them to the hot skillet. Any surface moisture on the potato slices will create steam when it hits the hot oil, which prevents the desired browning process.
After slicing, pat them dry with a clean kitchen towel or paper towels. Additionally, resist the urge to stir the potatoes too frequently; letting them sit undisturbed for the first few minutes is key to developing that perfect golden crust.
Adjusting the heat during cooking is essential for maintaining control over the browning process. If you notice the spices or the potato edges burning before the centers are tender, turn the heat down to medium.
You can also cover the skillet with a lid for two to three minutes during the potato cooking phase to help trap steam and cook the interiors faster, then uncover the pan for the final minutes to restore the crispy exterior.
Variations
- Spicy Cajun Skillet: Swap the smoked sausage for spicy andouille sausage and season the potatoes with Cajun seasoning instead of standard spices.
- Cheesy Potato Skillet: Top the finished skillet with a cup of shredded sharp cheddar or Monterey Jack cheese and cover with a lid for two minutes to melt before serving.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freezing is not recommended as the potatoes will become mealy and lose their texture.
- Reheat
- Reheat in a hot skillet with a splash of oil over medium heat until crispy and warmed through.
Store any leftover sausage and potatoes in an airtight container in the refrigerator for up to three to four days. Allow the mixture to cool to room temperature for no more than two hours before sealing and refrigerating. While the potatoes will lose some of their initial crispiness during storage, the flavors will continue to meld beautifully.
This dish is best enjoyed fresh from the skillet when the potatoes are at their crispiest. However, you can prep the ingredients ahead of time to speed up weeknight cooking.
Slice the sausage and store it in the refrigerator. Slice the potatoes and submerge them in a bowl of cold water in the fridge to prevent browning; drain and pat them completely dry before cooking.
Serving ideas
Serve this hearty skillet meal directly from the cast-iron pan for a rustic, family-style presentation. It pairs wonderfully with a simple, crisp green salad tossed in a light vinaigrette to balance the rich, smoky flavors of the sausage and potatoes.
You can also serve it alongside roasted green beans, steamed broccoli, or a side of warm applesauce for a classic sweet and savory combination.
For an extra touch of flavor, offer condiments like coarse grain mustard, hot sauce, or a dollop of sour cream at the table. A sprinkle of freshly grated parmesan cheese or a squeeze of fresh lemon juice over the top right before serving can also elevate the dish. It makes a fantastic, filling main course or a substantial side dish for a larger breakfast spread.

One-Skillet Crispy Potatoes and Smoked Sausage

Ingredients
- 1 1/2 lb potatoes, sliced into 1/4-inch rounds
- 12 oz smoked sausage, sliced into 1/4-inch rounds
- 1 tbsp spices
- 1 tbsp fresh herbs, chopped
Instructions
- Place a large cast-iron skillet over medium-high heat and let it get hot before adding any ingredients.
- Add the sliced smoked sausage to the dry, hot skillet. Cook, turning occasionally, for about 4 to 5 minutes until deeply browned on both sides and the fat renders. Transfer the cooked sausage to a plate and set aside, leaving the rendered fat in the pan.
- Add the sliced potatoes to the skillet in a single layer, tossing them in the rendered sausage fat to coat. Sprinkle the spices evenly over the potato rounds.
- Cook the seasoned potato rounds undisturbed for 5 to 6 minutes until the bottoms are deeply golden and crispy. Carefully flip each round and cook for another 5 minutes until both sides are crispy and the potato centers are completely tender when pierced with a fork.
- Return the browned smoked sausage slices to the skillet with the crispy potato rounds. Toss the mixture gently to combine and heat through over medium heat for 2 minutes.
- Scatter the finely chopped fresh herbs over the hot sausage and potato mixture. Toss once more for 1 minute until the herbs are fragrant and turn bright green, then remove the skillet from the heat and serve immediately.
