Tips for success

For an even deeper flavor profile, you can add a pinch of ground cinnamon or a splash of balsamic vinegar to the orange juice reduction.

The cinnamon enhances the festive, warm notes of the dish, while balsamic vinegar adds a complex, earthy depth that complements the tartness of the cranberries. Always make sure to spoon the glaze over the chicken right before serving to keep the skin as crispy as possible.

If you find the glaze is a bit too tart for your personal taste, you can let the orange juice reduce further to concentrate its natural sugars.

Cranberries can vary in acidity, so tasting the glaze right after they burst is a great way to gauge the flavor. Be careful not to burn the glaze, as the sugars in the orange juice can scorch if the heat is kept too high.

Variations

  • Spicy Cranberry Orange Chicken: Add a pinch of crushed red pepper flakes or a diced jalapeño to the skillet along with the orange juice for a delightful sweet, tart, and spicy kick.
  • Rosemary Cranberry Chicken: Swap out the fresh thyme sprigs for fresh rosemary sprigs to give the dish a more robust, piney, and aromatic herbal flavor profile.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
Reheat
Reheat gently in a skillet over medium-low heat with a splash of water or orange juice, spooning the sauce over the chicken until warmed through.

Allow any leftovers to cool completely at room temperature for no more than two hours before storing. Place the chicken and excess glaze into an airtight container and store in the refrigerator.

The glaze may thicken or gelatinize slightly when chilled due to the natural pectins, but it will liquefy beautifully again once reheated.

You can easily prep the ingredients a day in advance by zesting and juicing the oranges and washing the cranberries.

While this dish is best enjoyed fresh to preserve the crispy texture of the chicken skin, you can make the entire dish ahead of time and gently reheat it before serving, adding a splash of water or orange juice if the glaze is too thick.

Serving ideas

Serve this stunning skillet chicken hot, straight from the pan, spooning plenty of the glossy ruby-red glaze and soft cranberries directly over each portion. It pairs beautifully with a side of fluffy white rice, wild rice, or creamy mashed potatoes, which do an excellent job of soaking up the extra sweet and savory citrus glaze.

To complete the meal, serve the chicken alongside roasted green vegetables such as Brussels sprouts, asparagus, or green beans. The vibrant green colors of the vegetables look beautiful next to the deep ruby-red glaze, and their earthy, charred flavors provide a wonderful contrast to the bright, sweet, and tart notes of the dish.

Frequently asked questions

Can boneless, skinless chicken breasts be used instead?
Yes, but cook times will vary. Chicken breasts dry out faster, so sear them briefly and monitor the internal temperature closely to ensure they do not exceed 165°F (74°C).
What if the glaze is too tart?
If the glaze is too tart, let the orange juice reduce further to concentrate its natural sweetness, or use very ripe, sweet oranges for juicing.
Why is the glaze too thin?
The glaze may be too thin if the cranberries have not burst completely or if the liquid has not simmered long enough. Continue cooking for a few more minutes to let the natural pectins thicken the sauce.
Can frozen cranberries be used?
Absolutely. Frozen cranberries can be added directly to the skillet without thawing. They may just require an extra minute or two of simmering to burst.

One-Skillet Cranberry Orange Glazed Chicken

Prep 10 minCook 25 minTotal 35 minServes 4
A cast-iron skillet filled with golden-brown chicken thighs coated in a glossy, deep red cranberry orange glaze.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 cup whole cranberries
  • 4 sprigs fresh thyme

Instructions

  1. Place the chicken thighs skin-side down in a cold or preheated black cast-iron skillet over medium-high heat. Sear undisturbed for 8 to 10 minutes to render the fat and crisp the skin until it is deeply golden-brown. Flip and cook the other side for 4 minutes, then transfer the chicken to a plate, leaving the rendered fat in the skillet.
  2. Pour the fresh orange juice and orange zest into the hot skillet with the rendered chicken fat. Use a wooden spoon to scrape up any browned bits from the bottom of the pan, incorporating them into the liquid as it begins to simmer.
  3. Add the whole cranberries and fresh thyme sprigs to the bubbling citrus reduction. Simmer over medium heat for 5 to 6 minutes, stirring occasionally, until the cranberries pop open and release their juices, naturally thickening the mixture into a glossy, ruby-red glaze.
  4. Return the seared chicken thighs to the skillet, nesting them into the bubbling glaze. Spoon the thick cranberry orange glaze continuously over the chicken skin. Simmer for 5 to 7 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
