Tips for success

For the best texture, use a good-quality processed cheese like Velveeta; it melts into a silky sauce without separating.

If you prefer a more natural cheese, add a tablespoon of cornstarch to the shredded cheese before stirring it in to help stabilize the sauce. Always cut the Velveeta into small cubes so it melts evenly and quickly.

To make this dish spicier, add a diced jalapeño or a pinch of cayenne along with the Rotel. For a milder version, use mild Rotel and omit the extra heat.

If the sauce is too thin at the end, leave the slow cooker uncovered for 10 to 15 minutes to let it thicken. Conversely, if it's too thick, stir in a splash of warm broth or water until it reaches the desired consistency.

Variations

  • Spicy Chorizo Version: Replace the ground beef with fresh chorizo, removing the casings and browning it in the skillet. Reduce the taco seasoning to 1/2 ounce, as chorizo is already heavily spiced. The chorizo adds a smoky, spicy depth that pairs beautifully with the queso.
  • Chicken Fiesta Version: Use 1 1/2 pounds of ground chicken instead of beef. Cook it with the taco seasoning until no longer pink. The chicken is leaner but still absorbs the taco flavors well. Ensure it reaches 165°F (74°C) before serving.
  • Veggie Lover's Version: Add a cup of frozen corn and a diced bell pepper along with the black beans. Sauté the bell pepper with the beef for extra flavor. This adds color and a slight sweetness that complements the spicy Rotel.
  • Smoky Chipotle Version: Stir 1 to 2 chipotle peppers in adobo sauce, minced, into the sauce before cooking. This adds a deep, smoky heat. Reduce or omit the taco seasoning if you prefer a milder base. Top with extra cilantro to balance the heat.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Stir in a splash of broth or water when reheating to restore creaminess.
Freezer
Freeze in a freezer-safe container for up to 3 months.
Reheat
Reheat in the microwave in 1-minute intervals, stirring between, or in a saucepan over medium-low heat. Add a splash of broth or water to prevent drying out.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The pasta will absorb more liquid as it sits, so you may want to add a splash of broth or water when reheating to restore the creamy texture. Let the dish cool for no more than 2 hours before refrigerating.

You can brown the beef and assemble the base ingredients in the slow cooker insert the night before. Store the insert in the refrigerator, then place it in the slow cooker and start cooking when ready. Alternatively, cook the entire dish, let it cool, and refrigerate; reheat gently on the stovetop or in the microwave.

Serving ideas

Serve this taco queso pasta hot, straight from the slow cooker, with a generous scoop of toppings. Crushed tortilla strips add a satisfying crunch, while a dollop of sour cream brings tangy coolness.

Diced avocado provides creaminess, and cilantro adds a fresh, herbal note. It's a complete meal in a bowl, but you could also serve it with a side salad or warm tortillas.

For a fun presentation, set up a toppings bar so everyone can customize their bowl. Offer extra cheese, sliced jalapeños, or a squeeze of lime.

This dish is hearty enough to be the main event, but it also works well as a party dip if you serve it with tortilla chips. Pair it with a cold beer or a sparkling water with lime for a festive touch.

Frequently asked questions

Can this recipe be made ahead and refrigerated?
Yes, this dish can be made up to 3 days ahead. Cook the recipe fully, let it cool for no more than 2 hours, then store in an airtight container in the refrigerator. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water to restore the creamy sauce consistency.
Why does the pasta absorb too much liquid?
Pasta shells are absorbent, so they soak up the sauce as they sit. To prevent this, cook the pasta only until al dente and serve immediately. If making ahead, you can cook the pasta separately and add it when reheating, or add extra broth when reheating to loosen the sauce.
Can this recipe be made gluten-free?
To make it gluten-free, use gluten-free pasta shells and ensure your taco seasoning and Rotel are certified gluten-free. Many processed cheeses are gluten-free, but check the label. The rest of the ingredients are naturally gluten-free, so with these swaps, the dish is safe for a gluten-free diet.
How can the sauce be thickened if it is too thin?
If the sauce is too thin after cooking, leave the slow cooker uncovered on LOW for 10 to 15 minutes to allow excess liquid to evaporate. You can also stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water, then cook for 5 more minutes until thickened.
What is the best way to reheat leftovers without drying them out?
Reheat leftovers in a saucepan over medium-low heat, adding a splash of beef broth or water to loosen the sauce. Stir frequently to prevent sticking. Alternatively, microwave in 1-minute intervals, stirring between each, until hot. Avoid overheating, as it can make the pasta mushy.

Ingredients

  • 1 1/2 lb lean ground beef
  • 1 oz taco seasoning
  • 15 oz canned black beans, drained and rinsed
  • 10 oz canned Rotel diced tomatoes and green chilies
  • 16 oz Velveeta queso blanco, cut into cubes
  • 3 cups beef broth
  • 16 oz medium pasta shells
  • 1 1/2 cups shredded Mexican four-cheese blend
  • Crushed tortilla strips, for serving
  • Sour cream, for serving
  • Diced avocado, for serving
  • Chopped fresh cilantro, for serving

Instructions

  1. In a large skillet over medium-high heat, cook the ground beef, breaking it up with a wooden spoon, until browned and no longer pink. Stir in the taco seasoning and cook for 1 minute more. Transfer the seasoned beef to the slow cooker.
  2. Add the black beans, Rotel tomatoes, cubed Velveeta queso blanco, and beef broth to the slow cooker. Stir gently to combine everything, making sure the cheese cubes are submerged in the liquid.
  3. Cover the slow cooker and cook on LOW for 2 hours, until the cheese is fully melted and the mixture is bubbling around the edges. Stir once halfway through if possible.
  4. Add the medium pasta shells to the slow cooker and stir well to coat them in the sauce. Cover and cook on LOW for 20 to 30 minutes, stirring occasionally, until the shells are tender but still have a slight bite.
  5. Sprinkle the shredded Mexican four-cheese blend over the pasta and stir until fully melted and the mixture is ultra-cheesy and creamy. Cook for another 5 to 10 minutes on LOW, uncovered, to thicken slightly.
  6. Ladle the taco queso shells into bowls. Top each serving with crushed tortilla strips, a dollop of sour cream, diced avocado, and a sprinkle of chopped cilantro.
