Before you start

Before you begin, ensure you have all your ingredients measured and ready. Cut the chicken into uniform, bite-size pieces to ensure they cook at the same rate. Prepare your cauliflower by removing the tough stem and breaking it into bite-sized florets.

Have your curry powder and sauce measured and set aside so that assembly is quick and efficient. Clean your workspace and ensure your slow cooker insert is dry before adding the ingredients to prevent any unwanted moisture issues during the heating process.

Ingredients at a glance (4)
  • 1 1/2 lb boneless skinless chicken thighs, cut into bite-size pieces
  • 1 head cauliflower, cut into florets
  • 2 tbsp yellow curry powder
  • 2 cups coconut tomato curry sauce

Instructions

Layering the Proteins

  1. Prepare the Base
Place the cubed chicken thighs into the basin of your slow cooker, ensuring they are spread out in an even layer across the bottom for consistent cooking.
Look for chicken is evenly distributed
Tip Ensure the chicken pieces are relatively uniform in size for even cooking.

The chicken should be arranged in a single, even layer at the bottom of the cooker. Check that the pieces are cut to a uniform size to ensure they cook consistently throughout the four-hour duration.

Adding Aromatics and Sauce

  1. Add Aromatics and Vegetables
Add the cauliflower florets directly on top of the chicken. Sprinkle the yellow curry powder over the cauliflower and chicken evenly, then pour the coconut tomato sauce over the entire mixture until everything is well coated.
Look for sauce is poured over
Tip Do not stir the mixture yet; the sauce will naturally distribute as it cooks.

The cauliflower should be piled neatly on top of the chicken. Ensure the curry powder is sprinkled evenly across the surface and the coconut tomato sauce is poured over everything, covering the ingredients completely.

Slow Cooking

  1. Slow Cook to Perfection
Cover the slow cooker with the lid. Cook on low heat for 4 hours. Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving to ensure it is fully cooked through.
Look for chicken is tender and sauce is thickened
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during the first 3 hours to maintain a steady temperature.

The lid must be securely in place. The chicken should be cooked until it reaches 165°F (74°C). The kitchen will begin to smell warm and fragrant as the spices infuse the sauce.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking and excess liquid. Ensure there is enough space for the heat to circulate.

Another error is stirring the ingredients too early; let them cook undisturbed to allow the flavors to layer naturally.

Finally, using chicken breast instead of thighs without adjusting the cooking time can result in tough, dry meat, so always prioritize the recommended cut for the best texture.

How to tell it’s done

The dish is done when the chicken is opaque throughout and pulls apart easily with a fork. It must reach a safe internal temperature of 165°F (74°C).

The cauliflower should be fork-tender but still hold its shape, and the sauce should have thickened slightly, coating the back of a spoon. If the sauce appears too thin, you can remove the lid for the last thirty minutes of cooking to allow some liquid to evaporate.

  • Poultry: 165°F (74°C) in the thickest part
