Tips for success
For the best texture, use a good-quality tagliatelle that has a rough surface, which helps the sauce cling. If you prefer a smoother sauce, mash the vegetables more thoroughly.
You can also add a splash of pasta water if the sauce becomes too thick. The dish is forgiving—adjust the seasoning to your taste.
When serving, twirl the pasta into neat nests using tongs or a fork. This not only looks beautiful but also ensures each portion gets a good amount of cheese and sauce.
If you have leftovers, they can be reheated gently with a splash of water to loosen the sauce. The cheese will re-melt and the pasta will remain delicious.
Variations
- Spicy Arrabbiata Twist: Add 1/2 teaspoon of red pepper flakes along with the paprika and cumin for a spicy kick. Finish with a drizzle of chili oil before serving.
- Herb-Infused: Add a few sprigs of fresh thyme or oregano to the steaming vegetables. Remove the stems before crushing. Swap the parsley for fresh basil at the end.
- Creamy Version: Stir in 1/2 cup of heavy cream or crème fraîche after crushing the vegetables, before adding the pasta. This makes a richer, silkier sauce.
- Vegan Option: Use a vegan mozzarella-style shreds and check that the tagliatelle is egg-free. The rest of the ingredients are plant-based, making it a dairy-free and egg-free meal.

Serving ideas
Serve the tagliatelle hot, straight from the skillet, with extra shredded cheese and parsley on the side. A crisp green salad with a lemon vinaigrette would brighten the plate.
This pasta is a meal in itself, but it also pairs well with grilled chicken or a simple white bean salad.
For a more rustic presentation, bring the skillet to the table and let everyone twirl their own portion.
The melted cheese will stretch beautifully, making for a fun and interactive meal. Pair with a light red wine, such as a Chianti, to complement the rich tomato and vegetable flavors.

One-Pan Whole Vegetable Tomato Tagliatelle Pasta

Ingredients
- 1 large whole tomato
- 1 whole green zucchini
- 1 slender eggplant
- 2 peeled onions
- 1/4 cup olive oil
- 1/2 cup water
- 1 tsp sweet paprika
- 1 tsp cumin
- 1 tsp salt
- Black pepper to taste
- 10 oz tagliatelle pasta
- 1 cup boiling water
- 1 1/2 cups shredded kashar mozzarella cheese
- Chopped fresh parsley for garnish, to taste
Instructions
- Place the whole tomato, zucchini, eggplant, and peeled onions in a large skillet. Add the olive oil and 1/2 cup water. Cover with a glass lid and bring to a simmer over medium heat. Steam for 10 minutes, until the vegetables are tender and the skins loosen. Use culinary tweezers to peel away the loosened skins from the tomato, zucchini, and eggplant.
- Remove the lid. Sprinkle the vegetables with sweet paprika, cumin, salt, and black pepper. Using a potato masher, crush the vegetables directly in the skillet into a thick, rustic sauce. The mixture should be chunky but cohesive.
- Nestle the tagliatelle ribbons directly into the sauce. Pour in 1 cup of boiling water. Stir to combine, then bring to a gentle boil. Cook, stirring frequently, until the pasta is al dente and the sauce has thickened and coats the noodles, about 8 to 10 minutes. The pasta will absorb the liquid and become glossy.
- Once the pasta is cooked, remove the skillet from the heat. Sprinkle the shredded kashar mozzarella evenly over the top. Cover the skillet for 1 to 2 minutes so the cheese melts into gooey ribbons. Scatter with chopped parsley just before serving.
