Before you start

Before you begin, ensure your oven is fully preheated to 375°F (190°C). Have all your ingredients measured and ready to go. If using fresh bell peppers, dice them into uniform pieces to ensure they cook evenly.

Since this is a one-pan dish, there is very little cleanup required, but having your baking dish on a sturdy surface during assembly will make the process easier.

Ensure you have a clear space in your oven for the baking dish to sit level, which helps the liquid distribute evenly across the rice.

Ingredients at a glance (5)
  • 1 cup uncooked white rice
  • 1 cup diced bell peppers
  • 1 lb raw turkey meatballs
  • 2 cups tomato sauce
  • 1 cup shredded Colby Jack cheese

Instructions

Preparation and assembly

  1. Assemble the base
Preheat your oven to 375°F (190°C). In a large rectangular ceramic baking dish, spread the uncooked white rice evenly across the bottom. Scatter the diced bell peppers over the rice, then arrange the raw turkey meatballs in neat rows on top of the rice and pepper mixture.
Look for The rice should be evenly distributed across the bottom of the baking dish to ensure it cooks through properly.
Tip Ensure the meatballs are small and uniform in size so they cook at the same rate as the rice.

The rice should be spread in a single, even layer at the bottom of the dish. The peppers are distributed across the rice, and the meatballs are placed in organized rows on top. The ingredients are ready to be combined with the sauce and moved into the oven for the initial baking phase.

Baking the base

  1. Add sauce and bake
Pour the tomato sauce over the meatballs and rice, making sure it reaches the corners of the dish and covers the rice completely. Place the dish into the preheated oven and bake for 35 to 40 minutes, or until the meatballs reach an internal temperature of 165°F (74°C).
Look for The sauce should just cover the rice, providing enough moisture for the rice to absorb during the baking process.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Cover the dish with foil if you notice the meatballs browning too quickly before the rice is tender.

After 35 to 40 minutes, the rice should be soft and the tomato sauce mostly absorbed. The turkey meatballs should be cooked through and firm to the touch. Check the internal temperature of a meatball to ensure it has reached 165°F (74°C) before proceeding to the final step of adding the cheese.

Melting the cheese

  1. Add cheese and finish
Remove the baking dish from the oven. Sprinkle the shredded Colby Jack cheese evenly over the top of the meatballs and sauce. Return the dish to the oven for an additional 5 to 10 minutes, or until the cheese is melted, bubbling, and golden brown.
Look for The cheese should be fully melted and starting to bubble around the edges of the dish.
Tip Let the dish rest for 5 minutes before serving to allow the sauce to set and the flavors to meld.

The final phase is complete when the Colby Jack cheese is fully melted and shows golden brown spots on the surface. The entire dish should look cohesive, with the cheese binding the meatballs to the rice. It is now ready to be removed from the oven and allowed to rest before serving.

Common mistakes

Avoid over-crowding the baking dish, as this can prevent the heat from circulating properly and lead to uneven cooking. Do not skip the resting period, as it is essential for the rice to absorb the remaining sauce and for the texture to become cohesive.

Ensure the sauce is poured evenly over the rice; if the rice is left dry, it will remain hard. Finally, do not use a dish that is too shallow, as the sauce may bubble over during the cooking process.

How to tell it’s done

The dish is done when the rice is tender and has absorbed most of the liquid. The turkey meatballs must reach an internal temperature of 165°F (74°C) to be safely consumed. You can check this by inserting a meat thermometer into the center of one of the meatballs.

The cheese should be melted and bubbling around the edges, and the sauce should appear thickened. Allow the dish to rest for 5 minutes after removing it from the oven to let the sauce settle.

  • Poultry: 165°F (74°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
