Tips for success
For the best texture, do not open the lid during the 18-minute cooking time. The trapped steam is what makes the cake moist and airy.
If you’re using a skillet with a metal lid, use a potholder to check doneness quickly. The cake is forgiving — even if it sinks slightly, it will still taste wonderful.
To get clean slices, use a sharp knife and wipe it between cuts. Serve the cake warm for the ultimate fudgy experience.
If you like extra richness, add a scoop of vanilla ice cream or a dollop of whipped cream. The cake is also delicious the next day, cold from the fridge, with a dense, brownie-like texture.
Variations
- Peanut Butter Swirl: After pouring the batter into the skillet, drop spoonfuls of peanut butter over the top and swirl with a knife. The peanut butter melts into the cake as it cooks, creating pockets of nutty richness.
- Mint Chocolate: Add 1/2 teaspoon of peppermint extract to the batter and top with crushed peppermint candies instead of sprinkles. The cool mint pairs beautifully with the dark chocolate ganache.
- Orange Zest: Stir the zest of one orange into the batter and replace the strawberry with orange segments. The bright citrus cuts through the richness and adds a fresh aroma.
- Espresso Kick: Dissolve 1 teaspoon of instant espresso powder in the milk before adding it to the batter. The coffee enhances the chocolate flavor without making the cake taste like coffee.
Storage and make-ahead
- Fridge
- Store in the refrigerator in an airtight container for up to 4 days. Let come to room temperature or warm before serving.
- Freezer
- Wrap the cooled cake tightly in plastic wrap and freeze for up to 2 months. Thaw overnight in the refrigerator and warm before serving.
- Reheat

Store leftover cake in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days.
The ganache and white chocolate will set, but the cake stays moist. Bring slices to room temperature or warm briefly in the microwave before serving.
The cake can be made a day ahead. Cook and cool completely, then cover and refrigerate. When ready to serve, warm in a low oven or microwave. Add the ganache and toppings just before serving to keep the presentation fresh.
Serving ideas
Serve this cake warm, straight from the skillet, for a rustic and inviting presentation. The contrast of the warm fudgy cake, cool ganache, and fresh strawberry is irresistible.
A scoop of vanilla ice cream or a drizzle of extra chocolate sauce takes it over the top.
For a more formal dessert, slice the cake and plate each piece with a spoonful of the ganache and a few extra strawberries. The white chocolate drizzle adds elegance. This cake is perfect for birthdays, holidays, or any day that calls for chocolate.

One-Pan Stovetop Chocolate Skillet Cake

Ingredients
- 1 large egg
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 tbsp unsweetened cocoa powder
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp butter, for greasing the skillet
- 100 g melted chocolate ganache
- 2 tbsp chocolate sprinkles
- 1 fresh strawberry, fanned
- 2 tbsp white chocolate, melted
Instructions
- In a large bowl, whisk the egg, sugar, milk, vegetable oil, cocoa powder, flour, baking powder, and vanilla until the batter is completely smooth and no lumps remain. The batter will be thin and pourable.
- Place a 9-inch non-stick skillet over low heat and add the butter. Let it melt and coat the bottom and sides of the skillet evenly. Remove the skillet from the heat.
- Pour the chocolate batter into the greased skillet. Use a spatula to smooth the top into an even layer.
- Cover the skillet with a tight-fitting glass lid. Cook on the lowest stovetop flame for 18 minutes, without lifting the lid, until the cake is risen, spongy, and dry to the touch on top.
- After 18 minutes, carefully remove the lid. The cake should be fully set, springy to the touch, and a toothpick inserted into the center should come out clean. The internal temperature should read 160°F (71°C) to ensure the egg is fully cooked.
- While the cake is still warm in the skillet, pour the melted chocolate ganache over the top, spreading it gently with a spatula to cover the surface. Sprinkle with chocolate sprinkles and place the fanned strawberry in the center.
- Drizzle the melted white chocolate over the top of the cake in a zigzag pattern. Let the cake rest for 5 minutes before slicing.
- Slice the cake into wedges and serve warm. Use a dessert fork to press through the tender crumb and enjoy.
