Before you start

Before starting, ensure all ingredients are measured and ready. Draining and rinsing the black beans is essential to control the saltiness and texture of the final dish.

Preheating the oven is also critical, as the pasta needs immediate, consistent heat to begin absorbing the liquid properly. Clear your workspace to allow for easy assembly, and ensure your baking dish is clean and dry before you begin placing the ingredients inside.

Ingredients at a glance (6)
  • 1 lb dry rotini pasta
  • 15 oz canned black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 cups chunky red salsa
  • 2 cups vegetable broth
  • 2 cups shredded Mexican cheese blend

Instructions

Assembling the base

  1. Assemble the base
Preheat the oven to 375°F (190°C). In a large rectangular baking dish, combine the dry rotini, drained black beans, and corn kernels. Spread the mixture evenly across the bottom of the dish to ensure even cooking during the baking process.
Look for mixture is evenly distributed
Tip ensure the pasta is spread in a single layer for consistent hydration

The base is ready when the rotini, beans, and corn are evenly distributed across the bottom of the dish. There should be no large clumps of pasta, and the surface should look relatively level before you pour in the liquid mixture.

This ensures every piece of pasta has equal access to the cooking liquid, which is the key to achieving a uniform texture throughout the entire pan.

Adding liquid and cheese

  1. Add liquid and cheese
In a separate bowl, whisk together the chunky red salsa and vegetable broth until combined. Pour this liquid mixture over the pasta, beans, and corn, ensuring the pasta is completely submerged. Scatter the shredded Mexican cheese blend evenly over the top of the dish.
Look for liquid reaches the top of the pasta layer
Tip if the pasta is not covered, add a splash more broth to prevent dry edges

Check that the salsa and broth mixture covers the pasta completely. The pasta should be mostly submerged; if it is not, the top layer might remain hard. The cheese should be spread in an even, thin layer to cover the entire surface, which helps create a uniform, melted top that protects the pasta underneath from drying out during the intense heat of the oven.

Baking to perfection

  1. Bake until golden
Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 25 minutes. Remove the foil and continue baking for an additional 5 minutes until the cheese is melted, bubbling, and golden brown on top. Let rest for 5 minutes before serving.
Look for cheese is bubbling and golden
Tip resting allows the sauce to thicken slightly and adhere to the pasta

The dish is complete when the cheese is golden and the sauce is bubbling around the edges. When you lift a scoop with a spoon, the pasta should be tender, and the sauce should cling to the spirals. The cheese should show a slight stretch, indicating it has reached the perfect melting point. Let it sit briefly to allow the sauce to thicken before you begin plating.

Common mistakes

A common mistake is using too little liquid, which can result in dry, crunchy pasta. Ensure the liquid level just reaches the top of the pasta before baking. Another error is failing to cover the dish, which prevents the pasta from steaming correctly and can lead to uneven cooking.

Always use foil to trap the heat and moisture inside. Finally, avoid over-mixing the ingredients, as they will naturally integrate as the liquid bubbles during the bake.

How to tell it’s done

The dish is done when the pasta is tender to the bite and the liquid has thickened into a rich, flavorful sauce. The cheese on top should be completely melted, bubbling, and lightly golden brown in spots.

If you find the pasta is still firm, add a small amount of extra broth, cover, and bake for a few more minutes. Always let the dish rest for at least five minutes before serving to allow the sauce to settle.
