Tips for success

For the best texture, use a high-quality olive oil, as it contributes to the sauce's richness. Do not skip the blistering step—it adds a depth of flavor that cannot be achieved by simply sautéing.

If you like a smoother sauce, you can pulse the crushed vegetables with an immersion blender, but the rustic chunks are part of the charm.

When melting the cheese, keep the heat on medium and stir constantly to avoid burning. If the sauce becomes too thick, add a splash of pasta water or broth to loosen it.

Taste and adjust the seasoning before serving. Leftovers can be reheated gently with a splash of water or broth to restore the creamy texture.

Variations

  • Spicy Arrabbiata Style: Increase the chili flakes to 1 teaspoon or more for a fiery kick. Add a pinch of dried oregano and a splash of red wine vinegar at the end to brighten the sauce.
  • Creamy Vodka Sauce: Stir in 1/4 cup heavy cream along with the cheese for an extra luxurious, pink sauce. The cream mellows the acidity of the tomatoes.
  • Add Protein: Brown 1/2 pound of Italian sausage or ground beef in the skillet before adding the vegetables, then proceed with the recipe. This adds a savory, meaty depth.
  • Roasted Vegetable Medley: Swap the sweet red peppers for a mix of zucchini, eggplant, or yellow squash. Cut them into large chunks and blister them with the other vegetables for a summery twist.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of broth or water.
Freezer
Freeze the sauce (without pasta) for up to 3 months. Thaw overnight and reheat with fresh pasta.
Reheat
Reheat gently on the stovetop over medium-low heat, adding a splash of broth or water to restore creaminess.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen the sauce. The pasta will absorb liquid, so a little extra moisture helps.

The sauce can be made up to 2 days ahead. Prepare the sauce through step 2, let it cool, and refrigerate. When ready to serve, reheat the sauce, cook the pasta, and toss together with the cheese. This makes weeknight dinners even quicker.

Serving ideas

Serve this pasta hot, straight from the pan, for a casual family dinner. It pairs well with a simple green salad and crusty bread to soak up any extra sauce.

Garnish with fresh parsley and a sprinkle of chili flakes for a pop of color and heat.

For a heartier meal, serve alongside grilled chicken or Italian sausages. The pasta also works as a side dish for roasted meats. Since it is so saucy, it is best served in shallow bowls to catch all the delicious tomato pepper sauce.

Frequently asked questions

Can this pasta be made gluten-free?
Yes, use gluten-free pipe rigate or any gluten-free short pasta. Ensure the vegetable broth is also gluten-free. The rest of the ingredients are naturally gluten-free.
What can be used instead of kaşar cheese?
Kaşar cheese is a mild, semi-hard cheese that melts well. Good substitutes include mozzarella, provolone, or a blend of Italian cheeses. For a sharper flavor, try a young cheddar or gouda.
Can this recipe be doubled?
Absolutely. Use a larger skillet or Dutch oven to accommodate the extra vegetables and pasta. Increase the cooking time slightly, and ensure the pan is not overcrowded to allow proper blistering.
Why does the sauce turn out watery?
If the sauce is watery, it may be because the vegetables released too much liquid or the broth was added too early. Simmer the sauce longer to reduce it, or add a tablespoon of tomato paste to thicken.
Is it necessary to boil the pasta before adding it to the sauce?
Yes, boiling the pasta separately until al dente is essential because the sauce does not have enough liquid to cook the pasta. This also prevents the pasta from becoming overcooked and mushy.

One-pan rustic tomato pepper shell pasta in a skillet with melted cheese and parsley

Ingredients

  • 1/4 cup olive oil
  • 4 whole ripe tomatoes
  • 2 sweet red peppers
  • 1 quartered onion
  • 5 cloves garlic
  • 1 cup vegetable broth
  • Salt to taste
  • Black pepper to taste
  • Chili flakes to taste
  • 300 g pipe rigate shell pasta, boiled al dente
  • 1 1/2 cups shredded kaşar cheese
  • Fresh chopped parsley, to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the whole tomatoes, sweet red peppers, quartered onion, and garlic cloves. Cover with a glass lid and let them steam and blister for about 10 minutes, turning occasionally, until the skins are charred and the vegetables are very soft.
  2. Remove the lid and crush the softened tomatoes, peppers, and roasted garlic directly in the pan with a wooden spoon. Pour in the vegetable broth and season with salt, black pepper, and chili flakes. Bring to a simmer and cook for 5–7 minutes, stirring occasionally, until the sauce thickens slightly.
  3. Add the boiled al dente pipe rigate shell pasta directly into the sauce. Toss well to coat every shell in the tomato pepper sauce.
  4. Sprinkle the shredded kaşar cheese and fresh chopped parsley over the pasta. Toss continuously over medium heat until the cheese is fully melted and the sauce is creamy and glossy.
  5. Scoop the cheesy, saucy pasta into bowls. Garnish with extra parsley or chili flakes if desired, and serve hot.
