Before you start

Before starting, ensure your oven is preheated to 375°F (190°C) to allow for immediate cooking. Have your baking dish ready on a clear counter space. Prepare the green bell pepper by slicing it into uniform rings, removing the seeds and membranes.

Ensure your pork chops are patted dry, though no heavy seasoning is needed as the tomato broth provides ample flavor. Having all ingredients measured and ready before you start assembling the dish makes the process smooth and prevents any rushing.

Ingredients at a glance (4)
  • 2 cups long-grain white rice, uncooked
  • 4 pieces boneless pork chops
  • 24 oz diced tomatoes in red chili broth
  • 4 rings green bell pepper

Instructions

Assembly of the bake

  1. Assemble the base
Preheat the oven to 375°F (190°C). Arrange the uncooked long-grain white rice in an even layer across the bottom of a large ceramic baking dish. Place the four boneless pork chops directly on top of the rice, spacing them out evenly across the dish.
Look for Rice is spread evenly and chops are positioned.
Tip Ensure the rice is fully submerged in the liquid later so it cooks evenly.

At the end of this phase, the baking dish should contain an even layer of dry rice topped with the pork chops. The arrangement should be organized to ensure even cooking, with the chops spaced out so that the tomato liquid can surround them.

Verify that the dish is large enough to hold all components without overcrowding, as this will help the rice cook evenly and prevent the liquid from bubbling over during the baking process.

Liquid and flavor infusion

  1. Add liquid and aromatics
Pour the diced tomatoes with their red chili broth over the pork chops and rice, ensuring the rice is completely covered by the liquid. Place one green bell pepper ring on top of each pork chop to infuse flavor during the baking process.
Look for Rice is covered by liquid and peppers are centered on chops.
Tip Distribute the tomato broth carefully to avoid dry spots in the rice.

The dish is now ready for the oven, with the tomato broth coating the rice and the pepper rings resting atop the chops. Check that all the rice is moistened by the liquid to avoid uneven cooking. The aroma should be savory and slightly spiced from the chili broth. Ensure the oven is at the correct temperature before you place the dish inside to begin the transformation of these raw ingredients into a cohesive, flavorful meal.

Baking to completion

  1. Bake and rest
Cover the dish with foil and bake for 40 minutes. Remove the foil and bake for another 5 to 10 minutes until the rice is tender and the pork reaches an internal temperature of 145°F (63°C). Remove from the oven and let the pork rest for at least 5 minutes before serving.
Look for Dish is bubbling and pork is cooked through.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Check the center of the largest chop to ensure it is fully cooked.

Once the baking is complete, the dish will look golden and smell savory. The rice should be soft, and the pork should be tender. After resting, the dish is ready to serve. Check that the liquid has been mostly absorbed and the pork has reached the safe internal temperature. If the edges are bubbling, it is a sign that the flavors have concentrated and the dish is ready for the table.

Common mistakes

A common mistake is failing to cover the baking dish securely with foil, which causes the rice to dry out before it becomes tender. Another issue is using a dish that is too small, which prevents the rice from spreading out evenly and cooking uniformly.

Finally, avoiding the resting period for the pork can lead to drier meat, as the juices will escape as soon as you cut into it. Ensure the rice is fully submerged under the liquid at the start to avoid uncooked, crunchy grains.

How to tell it’s done

The dish is done when the rice is tender and has absorbed most of the liquid, leaving the edges slightly bubbling and golden. The pork chops should be opaque throughout and reach an internal temperature of 145°F (63°C) when measured with a meat thermometer in the thickest part of the meat.

Letting the chops rest for at least 5 minutes ensures the juices redistribute, resulting in a tender texture that pairs perfectly with the flavorful tomato rice.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
