Tips for success
For the best cheese pull, use fresh mozzarella that you shred yourself. Pre-shredded cheese often contains anti-caking agents that prevent it from melting as smoothly.
If you have time, let the meatballs rest for a few minutes after searing before adding the sauce—this helps them stay juicy. Also, don't skip the resting time after cooking; it allows the flavors to meld.
To make this dish even more flavorful, use a high-quality garlic tomato sauce. You can also add a pinch of red pepper flakes for heat or a handful of fresh basil leaves at the end for freshness.
If you prefer a more saucy consistency, add an extra splash of water or broth during simmering. The pasta will absorb liquid as it cooks, so adjust accordingly.
Variations
- Spicy Sausage Version: Swap the ground beef for fresh Italian sausage (casings removed) and add a pinch of red pepper flakes to the sauce. Cook the sausage as you would the meatballs, breaking it into small pieces. This adds a spicy, fennel-forward flavor that pairs beautifully with the tomato sauce.
- Vegetarian Option: Replace the meatballs with vegetarian meatballs or a combination of mushrooms and lentils. Sear them in the same way, then proceed with the recipe. Use a vegetable-based garlic tomato sauce. The cooking time remains the same, and the dish is just as satisfying.
- Cheese-Stuffed Meatballs: Insert a small cube of mozzarella into the center of each meatball before rolling. As they cook, the cheese melts and creates a gooey center. This adds an extra layer of indulgence. Be sure to seal the meatballs well to prevent the cheese from leaking out during cooking.
- Baked Version: After adding the sauce and pasta, transfer everything to a baking dish, cover with foil, and bake at 375°F (190°C) for 20 minutes. Uncover, sprinkle with mozzarella, and bake for an additional 5 minutes until melted and bubbly. This gives the top a slightly crispy cheese crust.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop with a splash of water or in the microwave.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium-low heat, adding a splash of water or sauce to loosen the texture. Or microwave in 30-second bursts, stirring in between.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce as it sits, so you may want to add a splash of water or extra sauce when reheating to restore the saucy texture.
The meatballs can be rolled and refrigerated up to a day ahead. You can also assemble the entire dish (without the cheese) and refrigerate it, then add the cheese and bake or reheat when ready to serve. If reheating from the fridge, add a little water to the skillet and heat gently.
Serving ideas
Serve this one-pan pasta straight from the skillet for a rustic, family-style presentation. Pair it with a simple green salad and crusty bread to soak up any extra sauce.
A sprinkle of fresh parsley or basil adds a pop of color and freshness, though the video doesn't show it—so keep it optional.
This dish is hearty enough to stand alone, but it also works well as a side for grilled chicken or fish. For a complete meal, add a side of roasted vegetables.
The cheesy, saucy pasta is a crowd-pleaser that appeals to both kids and adults, making it perfect for weeknight dinners or casual gatherings.

One-Pan Mini Meatball and Shell Pasta

Ingredients
- 1 lb seasoned ground beef
- 2 tbsp olive oil
- 3 cups garlic tomato sauce
- 8 oz pipe rigate pasta (or other short shells)
- 1 1/2 cups water
- 1 1/2 cups shredded mozzarella cheese
Instructions
- In a large bowl, roll the seasoned ground beef into bite-sized mini meatballs, about 1 inch in diameter. You should get roughly 20 to 24 meatballs. Set them on a plate while you heat the skillet.
- Heat the olive oil in a large skillet over medium-high heat. Add the mini meatballs in a single layer and sear until deeply browned and caramelized on all sides, about 5 to 7 minutes. Turn them gently to brown evenly. They do not need to be cooked through yet.
- Pour the garlic tomato sauce into the skillet with the meatballs. Add the pipe rigate pasta and water. Stir everything together, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer.
- Cover the skillet and reduce the heat to medium-low. Let the mixture simmer gently for 12 to 15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid. The sauce should cling to the pasta and meatballs.
- Check that the meatballs are cooked through by cutting one open—the center should be no longer pink. If needed, continue cooking for a few more minutes. The internal temperature of the meatballs should reach 160°F (71°C) as measured with an instant-read thermometer.
- Sprinkle the shredded mozzarella evenly over the top of the pasta and meatballs. Cover the skillet and let it sit over low heat for 2 to 3 minutes, until the cheese is completely melted and gooey.
- Scoop the steaming pasta and meatballs into bowls, making sure to get a generous amount of the melted cheese on top. Serve immediately while the cheese is still stretchy and the dish is hot.
