Tips for success
For the best flavor, use high-quality olive oil and ripe, in-season tomatoes. If the tomatoes are not very ripe, add a pinch of sugar to balance the acidity.
Let the sauce simmer gently to develop depth. Use a wide skillet to allow the sauce to reduce and coat the pasta evenly.
When adding the mozzarella, remove the skillet from the heat to prevent it from becoming stringy. Toss the pasta gently to coat without breaking it.
For a crispy topping, sprinkle extra Parmesan and broil for a minute. Serve immediately to enjoy the creamy texture at its peak.
Variations
- Spicy Arrabbiata: Add 1/2 teaspoon red pepper flakes along with the paprika for a spicy kick. Use hot Italian sausage instead of beef meatballs for extra heat and flavor.
- Vegetarian Version: Replace the beef meatballs with plant-based meatballs or sautéed mushrooms. Use vegetable broth instead of beef or chicken broth. Ensure the plant-based meatballs are cooked according to package instructions.
- Cheese-Stuffed Meatballs: Use meatballs stuffed with a cube of mozzarella in the center. The cheese will melt as the meatballs cook, creating a gooey surprise in every bite.
- Herb-Infused: Add a sprig of fresh basil or oregano to the sauce while simmering. Remove before serving. Garnish with fresh basil leaves in addition to parsley for a more aromatic finish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of broth or water to restore the sauce's creamy texture.
- Freezer
- Freeze the sauce and meatballs (without pasta) for up to 3 months. Thaw overnight in the refrigerator, then reheat and add freshly cooked pasta.
- Reheat
- Reheat in a skillet over medium-low heat, adding a splash of broth or water to loosen the sauce. Stir frequently until heated through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some sauce; add a splash of broth or water when reheating to restore creaminess. Reheat gently on the stovetop or in the microwave, stirring occasionally.
The sauce and meatballs can be prepared up to 2 days ahead. Cook the pasta fresh when ready to serve, or undercook it slightly and finish it in the sauce. The entire dish can be assembled and kept warm in a slow cooker on low for up to 2 hours, though the pasta may soften.
Serving ideas
Serve this meatball ring pasta in deep bowls, with extra grated Parmesan on top. A side of crusty bread is perfect for soaking up any remaining sauce.
For a complete meal, add a simple green salad with a light vinaigrette. The dish is hearty enough to stand alone as a main course.
This pasta is best enjoyed fresh from the skillet, when the cheese is still melty and the sauce is glossy.
Pair it with a glass of red wine, like a Chianti or Sangiovese, to complement the rich tomato and beef flavors. Leftovers make a great lunch the next day, though the texture will be softer.

One-Pan Meatball Ring Pasta with Whole Tomatoes

Ingredients
- 3 whole ripe red tomatoes
- 12 mini seasoned beef meatballs (about 1 lb)
- 3 tbsp olive oil
- 1 cup beef or chicken broth
- salt to taste
- black pepper to taste
- 1 tsp sweet paprika
- 250 g cooked ditalini ring pasta (about 2 1/2 cups)
- 100 g shredded mozzarella (about 1 cup)
- 1/4 cup fresh parsley, chopped
- grated Parmesan, for serving
Instructions
- Heat the olive oil in a large non-stick skillet over medium heat. Add the whole tomatoes and mini meatballs. Pour in the broth and bring to a gentle simmer. Season with salt, black pepper, and sweet paprika. Using tweezers, carefully peel the skins off the tomatoes as they soften, then discard the skins. Let everything simmer for about 10 minutes, until the tomatoes are very soft and the meatballs are cooked through.
- Once the tomatoes are soft and the meatballs are cooked, use a potato masher to crush the tomatoes directly in the skillet. Mash them to your desired consistency—chunky or smooth. Stir well to combine with the meatballs and broth. Let the sauce bubble gently for another 5 minutes to thicken slightly.
- Add the cooked ditalini ring pasta to the skillet with the tomato-meatball sauce. Sprinkle the shredded mozzarella over the top and add the chopped parsley. Toss everything together gently with a wooden spoon until the pasta is well coated and the cheese is melted and glossy.
- Remove the skillet from heat. Ladle the ring pasta and meatballs into bowls. Top each serving with extra grated Parmesan and a sprinkle of fresh parsley if desired. Serve immediately while hot and creamy.
