Tips for success
To elevate the flavor profile even further, consider adding a squeeze of fresh lemon juice over the entire dish right before serving. The bright acidity cuts through the richness of the garlic herb butter and highlights the natural sweetness of the green beans and roasted potatoes.
For an extra touch of texture, a light sprinkle of freshly grated Parmesan cheese over the potatoes and green beans during the last five minutes of baking creates a delicious, savory crust.
Ensuring the chicken breasts are of relatively equal thickness is key to even cooking. If some breasts are much thicker than others, gently pound the thicker portions with a meat mallet to level them out.
This prevents the smaller breasts from drying out while waiting for the larger ones to finish cooking. Additionally, letting the chicken rest before slicing is crucial for retaining its moisture.
Variations
- Lemon Herb Chicken: Add fresh lemon slices to the baking dish and squeeze lemon juice over the chicken and vegetables before the final bake.
- Spicy Garlic Chicken: Mix a half teaspoon of red pepper flakes into the garlic herb butter for a subtle, warming kick.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended as the green beans and potatoes will lose their pleasant texture upon thawing.
- Reheat
- Reheat in a 350°F (175°C) oven for 10 to 15 minutes, or microwave on medium power until warmed through.
Store any leftover chicken, potatoes, and green beans in an airtight container in the refrigerator within two hours of cooking. Kept properly, the leftovers will remain fresh and flavorful for up to three to four days. To maintain the texture of the vegetables and keep the chicken moist, it is best to store them together so the remaining herb butter continues to infuse the ingredients.
While this dish is best enjoyed fresh, you can prep several components ahead of time to save minutes on busy nights. Wash and halve the baby potatoes, and trim the green beans up to 24 hours in advance, keeping them stored in separate airtight containers in the fridge.
You can also mix the garlic herb butter beforehand; simply melt it gently before pouring it over the vegetables during assembly.
Serving ideas
Serve this roasted chicken dinner directly from the glass baking pan for a rustic, family-style presentation that keeps the food warm. Arrange the sliced herb-crusted chicken breasts in the center, flanked by the golden baby potatoes and bright green beans.
Spoon any leftover garlic herb butter from the bottom of the pan directly over the chicken slices to ensure every bite is exceptionally juicy and flavorful.
This complete meal pairs beautifully with a simple, crisp green salad dressed with a light vinaigrette to balance the rich buttery flavors. Warm, crusty rustic bread is also an excellent accompaniment, perfect for mopping up the delicious garlic-infused pan juices. For a complete dining experience, serve alongside a chilled glass of dry white wine, such as Sauvignon Blanc or Pinot Grigio.

One-Pan Herb Roasted Chicken with Garlic Butter Potatoes

Ingredients
- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1/2 lb green beans, trimmed
- 4 tbsp butter, melted
- 3 cloves garlic, minced
- 2 tbsp fresh herbs, finely chopped
- 1 tsp kosher salt and black pepper
Instructions
- Preheat the oven to 400°F (204°C). Pat the chicken breasts dry with paper towels. Place the chicken breasts in a 9x13-inch glass baking dish. Arrange the halved baby potatoes around the chicken. Season evenly with kosher salt and black pepper.
- Place the glass baking dish in the preheated oven and roast for 15 minutes, allowing the chicken to start cooking and the potatoes to begin softening.
- While the dish cooks, whisk the melted butter, minced garlic, and chopped fresh herbs in a small bowl. Carefully remove the baking dish from the oven. Pour the garlic herb butter over the sizzling potatoes. Add the trimmed green beans to the dish and use tongs to toss the potatoes and green beans together in the butter.
- Return the dish to the oven and bake for an additional 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender when pierced with a fork. Remove from the oven and let the chicken rest in the pan for 5 minutes.
- Transfer the rested chicken breasts to a cutting board and slice them into thick pieces. Arrange the sliced chicken back in the glass baking pan alongside the golden baby potatoes and bright green beans, spooning the pan juices over the top before serving.
