Tips for success

To achieve the absolute crispiest chicken skin, ensure the oven is fully preheated before putting the dish in; a hot oven is essential for immediate fat rendering. This dry, high-heat environment draws out moisture from the skin and cooks the meat deeply.

When roasted, the dried-out skin crisps up much faster and stays crispy longer. Additionally, ensure the chicken thighs are placed skin-side up so that the rendering fat can baste the meat and vegetables below.

If the broccoli begins to brown too quickly before the potatoes and chicken are fully cooked, loosely tent a piece of aluminum foil over the baking dish. This slows down the browning on top while allowing the heat to continue cooking the chicken and potatoes underneath.

For an extra burst of flavor, toss a few whole, unpeeled garlic cloves into the potato mixture; they will roast into sweet, spreadable treats that pair beautifully with the savory chicken.

Variations

  • Lemon Garlic Herb Chicken: Squeeze fresh lemon juice over the chicken and vegetables before roasting and tuck lemon slices between the pieces for a bright, citrusy lift.
  • Spicy Garlic Herb Chicken: Add a teaspoon of crushed red pepper flakes to the garlic herb mixture to give the roasted potatoes and chicken a subtle, spicy kick.
  • Root Vegetable Roast: Replace half of the potatoes with cubed carrots and parsnips to add natural sweetness and varied textures to the one-pan bake.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days, cooling within 2 hours of cooking.
Freezer
Freezing is not recommended as the potatoes and broccoli will become mushy and lose their texture upon thawing.
Reheat
Reheat in a 350°F (175°C) oven for 15 minutes to crisp the chicken skin, or microwave individual portions until hot.

Store any leftover garlic herb chicken and potatoes in an airtight container in the refrigerator within two hours of cooking to ensure food safety. Properly stored, the leftovers will keep well for up to three to four days.

Note that while the chicken and potatoes reheat beautifully, the roasted broccoli may lose some of its vibrant color and become slightly softer upon storage. Keep the chicken skin-side up in the container to preserve as much crispness as possible.

This dish is best enjoyed fresh from the oven, but some prep work can be done ahead of time to save precious minutes. You can wash and chop the potatoes and store them in a bowl of cold water in the fridge for up to 24 hours to prevent browning; just dry them thoroughly before roasting. The broccoli can also be cut into florets and stored in a dry container. Do not combine the vegetables with the garlic and herbs until immediately before baking.

Serving ideas

Serve this one-pan roast hot, directly from the oven, to appreciate the contrasting textures of the crispy chicken skin and tender vegetables. Arrange a chicken thigh alongside a generous spoonful of the roasted potatoes and broccoli on each plate.

The bottom of the glass dish will contain delicious, flavorful pan juices; spoon these savory drippings over the chicken meat and potatoes just before serving to add extra moisture and rich garlic-herb flavor.

This complete meal stands perfectly on its own, but it can be accompanied by a simple side green salad with a light vinaigrette to cut through the richness of the roasted chicken. A crusty loaf of rustic bread is also an excellent addition, perfect for wiping up any remaining garlic-infused pan juices from the plate. Serve with chilled water or a crisp white wine to complement the savory, herbaceous notes of the dish.

Frequently asked questions

Can chicken breasts be used instead of thighs?
Yes, but chicken breasts cook faster and dry out more easily. Reduce the baking time and monitor the internal temperature closely until it reaches 165°F (74°C).
Why did the broccoli burn before the potatoes cooked?
Broccoli cooks faster than potatoes. Ensure the potatoes are cut into small, uniform one-inch cubes and the broccoli florets are kept slightly larger so they finish roasting at the same time.
Is it necessary to use a glass baking dish?
A glass baking dish is excellent for heat retention, but a metal rimmed baking sheet or a cast-iron skillet can also be used with great results.
Can dried herbs be used instead of fresh?
Yes, dried rosemary and thyme can be substituted. Use one teaspoon of dried herbs for every tablespoon of fresh herbs required in the recipe.

One-Pan Garlic Herb Chicken and Potatoes

A round glass baking dish filled with roasted garlic herb chicken thighs, golden potatoes, and charred broccoli.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 lb Yukon Gold potatoes, cubed
  • 1 head broccoli, cut into florets
  • 4 cloves garlic, minced
  • 1 tbsp chopped fresh herbs

Instructions

  1. Preheat the oven to 400°F (204°C). Wash and dry the vegetables thoroughly. Cut the Yukon Gold potatoes into one-inch cubes and chop the broccoli into uniform florets. In a large mixing bowl, combine the potatoes and broccoli with the minced garlic and chopped fresh herbs.
  2. Transfer the seasoned potato cubes and broccoli florets from the mixing bowl into a round glass baking dish. Spread them out into a single, even layer to ensure uniform heat distribution and consistent cooking throughout the roasting process.
  3. Pat the bone-in, skin-on chicken thighs completely dry with paper towels. Rub the chicken thighs with the minced garlic and chopped fresh herbs on all sides, ensuring they are well coated.
  4. Nestle the seasoned chicken thighs directly on top of the bed of potatoes and broccoli in the round glass baking dish. Place them skin-side up, leaving a little space between each thigh so the skin can brown and crisp properly.
  5. Place the round glass baking dish into the preheated oven. Bake uncovered for 35 to 40 minutes, checking occasionally to ensure the vegetables are becoming tender and starting to caramelize around the edges as the chicken cooks.
  6. Continue roasting until the chicken skin is exceptionally crispy and golden brown. Insert an instant-read meat thermometer into the thickest part of the poultry without touching the bone; it must register at least 165°F (74°C). Remove from the oven and let the dish rest for 5 minutes before carving.
