Before you start

Before beginning, ensure your oven is fully preheated to 375°F (190°C). Prepare your ingredients by draining and rinsing the black beans thoroughly to remove excess sodium and starch.

Dice the bell pepper into uniform, small pieces to ensure they soften at the same rate as the rice. Have your broth measured and ready in a pitcher for an easy pour, and slice your cold butter into thin, even pieces so they distribute perfectly across the top of the dish.

Ingredients at a glance (5)
  • 2 cups uncooked yellow rice
  • 15 oz canned black beans, drained and rinsed
  • 1 medium diced bell pepper
  • 4 cups cumin-garlic vegetable broth
  • 3 tbsp unsalted butter, thinly sliced

Instructions

Layering the ingredients

  1. Assemble the base
Preheat your oven to 375°F (190°C). In a large 9x13 inch baking dish, spread the uncooked yellow rice in an even layer. Scatter the rinsed black beans and the freshly diced bell pepper over the top of the rice, ensuring an even distribution across the entire surface of the dish.
Look for The rice should be spread in a flat, uniform layer.
Tip Using a glass or ceramic baker helps the rice cook more evenly.

The dish should look visually appealing with the yellow rice, black beans, and colorful bell peppers layered neatly. Ensure the rice is spread into an even, flat bed across the bottom of the baker, as this will dictate how evenly the liquid is absorbed during the baking process.

Adding broth and butter

  1. Add liquid and fat
Carefully pour the cumin-garlic vegetable broth over the rice mixture until it is just submerged. Arrange the thin slices of butter evenly across the top of the beans and rice. The butter will melt during baking, adding richness to the grains as they absorb the flavorful broth.
Look for The liquid should just barely cover the surface of the rice.
Tip Pour slowly to avoid displacing the ingredients layered on top.

The broth should be poured gently to avoid disturbing the layers. The liquid should reach just to the top of the rice, and the butter slices should be evenly spaced.

This stage is critical; double-check that every corner of the baker has received enough liquid to ensure uniform cooking.

Baking until tender

  1. Bake until fluffy
Cover the baking dish tightly with aluminum foil and place it in the center rack of the oven. Bake for approximately 40 to 45 minutes, or until the rice is tender and the liquid has been fully absorbed. Remove from the oven and let it rest for 5 minutes before fluffing with a fork.
Look for The rice should be tender and the liquid fully absorbed.
Tip Letting the dish rest ensures the texture of the rice remains fluffy.

After baking, the surface should look bright yellow and aromatic. The rice should be light and fluffy, with no visible liquid remaining at the bottom of the dish. It should smell fragrant with the scent of cumin and garlic, indicating that the flavors have successfully melded together.

Common mistakes

Avoid using too much liquid, as this will result in mushy rice rather than individual, fluffy grains. Ensure the foil is sealed tightly; if steam escapes, the rice on the edges may remain crunchy while the center is soft.

Do not stir the ingredients after adding the liquid, as this can break the rice grains and release excess starch, leading to a gummy texture. Finally, do not rush the resting period, as this is when the final moisture balance occurs.

How to tell it’s done

The dish is perfectly cooked when the rice is tender and has absorbed all the liquid. You can test this by gently lifting a small portion from the center of the baker with a fork; if the rice is fluffy and no liquid remains at the bottom, it is ready.

The bell peppers should be soft yet still hold their shape, and the black beans should be warmed through. Let the dish rest for at least 5 minutes before serving.
