Tips for success

To achieve an even deeper flavor, consider searing the chicken drumsticks in a skillet for a few minutes before placing them in the baking dish. This adds a layer of complexity to the skin and creates a richer base for the orzo to cook in, enhancing the overall depth of the finished meal.

If you prefer a crispier top, you can briefly switch the oven to the broiler setting for the final two minutes of cooking. Watch the dish closely during this time to ensure the feta browns without burning, which adds a delightful texture contrast to the creamy pasta and tender chicken.

Variations

  • Spicy Tomato Orzo: Incorporate a teaspoon of red pepper flakes into the tomato broth before pouring it over the dish. This adds a subtle, warming heat that complements the savory tomato flavor and pairs perfectly with the creamy feta cheese for a more vibrant, bold taste profile.
  • Vegetable-Packed Bake: Add a cup of frozen peas or chopped bell peppers to the orzo layer before adding the broth. These vegetables add extra color and texture to the dish, increasing the variety of flavors while keeping the preparation simple and maintaining the integrity of the one-pan cooking method.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Not recommended for freezing as the texture of the orzo will change upon thawing.
Reheat
Reheat in the oven at 350°F until warmed through, or use the microwave in short intervals, adding a splash of water to keep the orzo moist and creamy.

Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container. This helps maintain the quality and safety of the dish.

When stored properly, it can be kept in the refrigerator for up to three days, making it an excellent choice for convenient, pre-prepared meals throughout the week.

You can prepare the dish up to the point of baking by assembling the orzo and chicken in the dish and covering it tightly with plastic wrap.

Keep it in the refrigerator for up to 24 hours before adding the broth, feta, and baking. This makes it a stress-free option for hosting or busy evenings when you need a quick dinner.

Serving ideas

Serve this dish directly from the baking vessel for a rustic, family-style presentation.

Use a large spoon to scoop a generous portion of the saucy orzo alongside a golden drumstick, ensuring everyone gets a good amount of the creamy, feta-flecked sauce that has settled at the bottom of the pan.

Pair this meal with a crisp, simple green salad or some steamed vegetables to balance the richness of the tomato and feta.

The light acidity and crunch of fresh greens provide a perfect contrast to the soft, savory pasta and roasted chicken, rounding out the dining experience beautifully for all your guests.

Frequently asked questions

Can other types of pasta be used instead of orzo?
While orzo is recommended for its quick cooking time and rice-like texture, small pasta shapes such as ditalini or stars can be substituted. Note that cooking times may vary slightly depending on the shape and thickness of the pasta used, so monitor the dish closely.
Why does the orzo sometimes turn out mushy?
Mushy orzo is usually the result of overcooking or using too much liquid. Ensure the broth just covers the pasta and chicken as instructed. Using a timer and checking the texture toward the end of the suggested baking time helps maintain the perfect al dente consistency.
Is it possible to use boneless chicken for this recipe?
Boneless, skinless chicken thighs can be used, but they will cook faster than bone-in drumsticks. Reduce the baking time by about 10 to 15 minutes to prevent the meat from drying out. Using a meat thermometer is the most reliable way to ensure the chicken is cooked through.

Ingredients

  • 1 1/2 cups dry orzo pasta
  • 6 raw skin-on chicken drumsticks
  • 2 1/2 cups thin tomato broth with oregano
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 375°F (190°C). In a large rectangular ceramic baking dish, spread the dry orzo pasta evenly across the bottom. Arrange the raw skin-on chicken drumsticks on top of the dry orzo, nesting them slightly so they remain stable during the baking process.
  2. Pour the thin tomato broth with oregano over the orzo and chicken. Ensure the broth just covers the orzo. Sprinkle the crumbled feta cheese evenly over the top of the dish. The liquid will hydrate the pasta and cook the chicken simultaneously in the oven.
  3. Place the dish in the preheated oven and bake for 40 to 45 minutes. The chicken is done when the internal temperature reaches 165°F (74°C). Remove from the oven and let the dish rest for 5 minutes before serving to allow the sauce to thicken and the flavors to meld.
