Tips for success
For the most flavorful carnitas, use a good-quality salsa verde—either homemade or a brand you trust. The salsa is the backbone of the dish, so choose one with a bright, tangy flavor.
If you like extra heat, add a chopped jalapeño or a dash of hot sauce when you layer the ingredients. You can also stir in a squeeze of lime juice before serving to brighten the flavors.
When shredding the pork, use two forks and pull in opposite directions for the best texture. If you prefer chunkier carnitas, leave some pieces larger.
The sauce will thicken as it sits; if it becomes too thick, add a splash of chicken broth or water to loosen it. Taste and adjust seasoning—the cheese and salsa add salt, so you may not need extra.
Variations
- Spicy Chipotle: Add 2 chipotle peppers in adobo sauce, minced, along with the salsa verde. This will give the dish a smoky, spicy kick. Reduce the green chiles to 1/2 cup to balance the heat.
- Citrus Bright: Stir in the juice and zest of 1 orange and 1 lime before serving. The citrus brightens the flavors and adds a fresh note that pairs well with the rich pork and cheese.
- Veggie-Packed: Add 1 cup of frozen corn and 1 diced bell pepper to the slow cooker with the pork. These vegetables add sweetness and texture, making the dish more substantial.
- Creamy Avocado: Top each serving with sliced avocado and a dollop of crema or sour cream. The cool, creamy avocado balances the tangy salsa and adds a luxurious texture.

This dish is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert and refrigerate overnight, then start cooking in the morning.
Or, cook the full recipe and freeze portions for later. The carnitas freeze well for up to 3 months—just thaw overnight in the fridge and reheat on the stovetop or microwave.
Serving ideas
Serve the carnitas over warm Spanish red rice for a classic combination. The rice's subtle tomato flavor complements the tangy salsa verde and rich cheese.
You can also use the carnitas as a filling for tacos, burritos, or quesadillas. Top with fresh cilantro, diced onion, or a drizzle of crema for extra indulgence. A side of refried beans or a simple green salad rounds out the meal.
For a lighter option, serve the carnitas on lettuce cups or over a bed of greens. The sauce is hearty enough to stand on its own. If you have leftovers, try them in a breakfast hash with eggs or piled onto tostadas with avocado. This recipe is versatile and delicious in many forms, so don't be afraid to get creative.

Oaxaca Queso Salsa Verde Pork Carnitas: Slow-Cooker Dump Dinner

Ingredients
- 3 lb pork shoulder, cut into 2-inch chunks
- 1 1/2 cups tomatillo salsa verde
- 1 cup diced Hatch green chiles
- 8 oz shredded Oaxaca cheese
- 1 cup shredded Mexican four-cheese blend
- Spanish red rice, for serving
Instructions
- Place the pork shoulder chunks in the slow cooker in an even layer. Pour the tomatillo salsa verde and diced Hatch green chiles over the meat, making sure the pork is mostly covered. Use a spoon to gently stir the mixture so the chiles and salsa coat the pork evenly.
- Sprinkle the shredded Oaxaca cheese and Mexican four-cheese blend evenly over the pork and salsa mixture. Do not stir; the cheese will melt and form a blanket as it cooks, trapping moisture and flavor.
- Cover the slow cooker and cook on low for 8 to 10 hours, or until the pork is fork-tender and shreds easily. Do not lift the lid during the first 6 hours to keep the heat steady. The cheese will melt into the sauce and the pork will become infused with the salsa verde. Let it rest for 3 minutes before slicing.
- Once the pork is tender, use two forks to shred it directly in the slow cooker. Stir the shredded meat into the cheesy salsa verde sauce until well combined. Let it sit uncovered for 10 minutes so the sauce thickens slightly.
- Spoon the hot carnitas over a bed of Spanish red rice on a plate. Use a slotted spoon to serve so excess sauce doesn't make the rice soggy. Garnish with extra salsa verde or chopped cilantro if desired (not shown in video).
