Tips for success
For the best melt, use block cheese and shred it yourself. Pre-shredded cheese often has a coating that prevents clumping but also hinders melting, leaving a gritty texture.
If you're in a hurry, you can use pre-shredded, but the sauce will be less smooth. Also, consider adding a pinch of salt and pepper to the chicken layer — the video doesn't show it, but it enhances the flavor without overpowering the cheese.
If you want a bit of heat, add a diced jalapeño or a teaspoon of chipotle in adobo to the slow cooker before cooking. But keep it simple if you're feeding a crowd. The roasted poblanos are mild, so this dish is family-friendly.
For a crispy top, you can transfer the shredded chicken to a baking dish and broil for 2-3 minutes until the cheese browns and blisters — but the video shows it right from the slow cooker, so that's optional.
Variations
- Spicy Chorizo Twist: Swap the chicken for 1 lb of fresh Mexican chorizo, cooked and drained. Follow the same layering method with the poblanos, hominy, and cheese. The chorizo's spices will infuse the cheese sauce with a bold, smoky heat. Cook on LOW for 3 hours, then serve as above.
- Green Chile Chicken: Replace the roasted poblanos with 2 cans (4 oz each) of diced green chiles for a milder, tangier flavor. Add a teaspoon of ground cumin to the chicken layer for extra depth. The rest of the recipe stays the same; the green chiles blend into the cheese sauce beautifully.
- Creamy Tomatillo Version: Stir 1 cup of salsa verde into the slow cooker with the chicken. The tomatillo adds a bright, citrusy note that cuts through the cheese richness. Reduce the hominy to 1/2 can to keep the consistency thick. Cook as directed; the salsa will create a slightly thinner sauce.
- Vegetarian Fiesta: Omit the chicken and add 2 cups of cooked black beans or pinto beans along with the hominy. The cheese and vegetables create a hearty, satisfying meal. Cook on LOW for 2 hours, just until the cheese is melted and the beans are heated through. Serve over rice or with warm tortillas.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water to restore the creamy texture.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat on the stovetop or microwave.
- Reheat
- Reheat individual portions in the microwave at 50% power in 1-minute increments, stirring between, or in a saucepan over low heat with a splash of broth.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The cheese will solidify, but it will melt again when reheated.
To reheat, place a portion in a microwave-safe dish and heat in 30-second intervals, stirring in between, or reheat in a saucepan over low heat with a splash of chicken broth to loosen the sauce. Do not leave the dish out at room temperature for more than 2 hours — refrigerate promptly.
This recipe is ideal for making ahead. You can assemble the raw ingredients in the slow cooker insert and refrigerate it overnight, then start cooking the next day. If you do this, add 30 minutes to the cooking time because the ingredients start cold. Alternatively, cook the full recipe, shred the chicken, and store it in the refrigerator for up to 4 days. It also freezes well — see freezer instructions.
Serving ideas
Serve the fiesta chicken over steamed Spanish red rice for a complete meal, as shown in the video. The rice absorbs the creamy sauce and provides a fluffy contrast to the rich chicken. For a low-carb option, serve it in lettuce cups or over cauliflower rice. You can also spoon it into warm corn tortillas and top with fresh cilantro, diced onion, or a squeeze of lime — all optional garnishes not shown in the video.
This dish is substantial enough to stand alone, but it also pairs well with a simple side salad or sautéed vegetables. The creamy, cheesy chicken is rich, so a bright, acidic side like a citrus slaw would balance it nicely.
For a festive presentation, serve it in a large bowl with extra shredded cheese, sliced jalapeños, and warm tortillas on the side. The leftovers are even better the next day as a filling for tacos or a topping for nachos.
