Before you start

Before starting, ensure the bananas are very ripe and peeled. Process the cocoa tea biscuits into fine crumbs in a food processor. Measure out the chopped hazelnuts, pistachios, cocoa powder, and milk.

Have a sheet of plastic cling wrap ready for shaping the log. Prepare a baking sheet lined with parchment paper for the dipped bites. Melt the dark chocolate just before dipping, so it stays fluid and easy to work with.

Ingredients at a glance (8)
  • 2 packages cocoa tea biscuits (petibör)
  • 2 ripe bananas, peeled
  • 2 tbsp roasted hazelnuts, chopped
  • 2 tbsp roasted pistachios, chopped
  • 2 tbsp dark cocoa powder
  • 3 tbsp milk
  • 200 g dark chocolate, melted
  • Crushed pistachios, for garnish, to taste

Instructions

Mix and Shape

  1. Make the Chocolate Dough
Place the cocoa tea biscuits in a food processor and process into fine crumbs. Transfer the crumbs to a wide glass bowl. Add the peeled bananas and mash with a fork directly into the crumbs until well combined. Add the chopped hazelnuts, chopped pistachios, dark cocoa powder, and milk. Knead with your hands until a smooth, pliable chocolate dough forms.
Look for The dough should hold together when pressed and feel moist but not sticky.
Tip If the dough seems dry, add an extra teaspoon of milk. If too sticky, add a few more biscuit crumbs.
  2. Shape the Log
Place the dough on a sheet of plastic cling wrap. Roll it into a tight, even cylindrical log, twisting the ends of the wrap to secure. Freeze the log for 1 hour, or until firm enough to slice cleanly.
Look for The log should be firm to the touch and hold its shape when unwrapped.
Tip For a perfectly round log, roll it back and forth on the counter while applying gentle pressure.

The dough should be dark, fragrant with cocoa and banana, and hold together when pressed. The log should be smooth and evenly shaped, with the nuts visible throughout. The mixture will smell sweet and nutty, and the texture will be moist and pliable.

Slice and Dip

  1. Slice and Dip
Remove the chilled log from the freezer and unwrap. Using a sharp chef knife, slice the log into 1.5 cm thick rounds. Melt the dark chocolate in a small bowl. Dip half of each slice into the melted chocolate, allowing the excess to drip off. Place the dipped bites on a parchment-lined baking sheet.
Look for The slices should be neat and the chocolate coating should be smooth and even.
Tip Use a fork to hold the slice while dipping to keep your fingers clean.

The slices should be uniform, about 1.5 cm thick, with a mosaic of nuts and chocolate crumbs. The melted chocolate should coat the half of each slice smoothly, and the excess should drip off easily. The coating should be glossy and free of air bubbles.

Garnish and Set

  1. Garnish and Set
Sprinkle the crushed pistachios over the chocolate-dipped bites while the chocolate is still wet. Chill the bites on the baking sheet for about 15 minutes, or until the chocolate is set. Serve and enjoy.
Look for The chocolate should be firm and the pistachios should stick to the coating.
Tip For a cleaner look, sprinkle the pistachios immediately after dipping so they adhere well.

The crushed pistachios should stick to the wet chocolate, creating a green and brown contrast.

The chocolate should be fully set and firm to the touch, with a slight sheen. The bites should look neat and appetizing, with the pistachio garnish adding the final touch.

Common mistakes

A common mistake is over-processing the biscuits into a powder that becomes too fine, leading to a dry dough. If the dough is too dry, add milk a teaspoon at a time.

If the log is not chilled long enough, the slices will fall apart; freeze for at least 1 hour. When dipping, work quickly so the chocolate does not set before you sprinkle the pistachios. Use a sharp knife to slice the log for clean edges.

How to tell it’s done

The dough is ready when it comes together into a smooth, cohesive ball that holds its shape when pressed. After chilling, the log should be firm enough to slice without crumbling.

The chocolate coating should set completely and be firm to the touch. There is no internal temperature to check for this no-bake recipe; visual and tactile cues are the best indicators.
