Before you start

Before starting, cut the skirt steak into 2-inch strips, trimming any excess fat. Drain the pineapple tidbits well. Mince the chipotle peppers; if you prefer less heat, scrape off some of the adobo sauce before mincing.

Have the sour cream and shredded Monterey Jack ready. No other prep is needed—everything goes into the slow cooker in layers.

Ingredients at a glance (7)
  • 2 lb beef skirt steak, cut into strips
  • 1 can (20 oz) pineapple tidbits in juice, drained
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 1/2 cup sour cream
  • 2 cups shredded Monterey Jack cheese
  • 1 tsp kosher salt
  • warm flour tortillas, for serving

Instructions

Layer and Top

  1. Layer the Ingredients
Place the beef skirt steak strips in the bottom of a 6-quart slow cooker. Sprinkle with kosher salt. Add the drained pineapple tidbits and the minced chipotle peppers in adobo sauce, spreading them evenly over the meat.
Look for The meat is covered with pineapple and chipotle, looking colorful.
Tip Cut the steak into uniform strips so they cook evenly.
  2. Add Creamy Toppings
Dollop the sour cream over the top, then sprinkle with the shredded Monterey Jack cheese. Do not stir; just let the ingredients sit in layers.
Look for The top is covered with sour cream and cheese.
Tip Stirring now isn't necessary—the slow cooker will blend everything as it cooks.

At this point, the slow cooker contains distinct layers: raw steak strips seasoned with salt, covered with pineapple tidbits and chipotle, then topped with dollops of sour cream and a blanket of shredded cheese.

The colors are vibrant—red, gold, white, and yellow—and the aroma of chipotle is already noticeable. Everything is ready to cook.

Slow Cook and Shred

  1. Slow Cook
Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender and easily shreds. The sauce will be bubbly and the cheese melted. Let it rest for 3 minutes before slicing.
Look for The sauce is bubbling around the edges and the meat is tender.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Cook on LOW for the most tender results; HIGH works in a pinch.
  2. Shred the Beef
Using two forks, shred the beef directly in the slow cooker. Stir to coat all the pieces with the sauce. If the sauce seems thin, cook uncovered on HIGH for 15 minutes to thicken.
Look for The beef shreds easily and absorbs the sauce.
Tip Shredding while warm makes it easier and the meat stays juicy.

After several hours, the slow cooker is bubbling gently, and the kitchen smells of smoky chipotle and sweet pineapple. The cheese has melted into the sauce, and the beef is tender enough to shred with forks. The sauce is glossy and coats the meat easily. If it seems too thin, let it reduce for a few minutes uncovered.

Serve

  1. Serve with Tortillas
Spoon the chipotle pineapple skirt steak into warm flour tortillas, or serve over rice. Let the meat rest for at least 3 minutes before serving to allow the juices to redistribute.
Look for The filling is glossy and thick, perfect for spooning.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Warm the tortillas in a dry skillet or microwave for pliability.

The finished dish is a saucy, fragrant pile of shredded beef in a creamy, smoky-sweet sauce. The beef is moist and tender, the sauce is thick enough to cling to a spoon. Warm tortillas are ready on the side. The final dish looks inviting, with steam rising and a rich amber color.

Common mistakes

One common mistake is overcooking on HIGH, which can dry out the meat even in a slow cooker. Stick to LOW when possible. Another is adding too much liquid—the pineapple and sour cream provide enough moisture.

If the sauce is too thin, remove the lid and cook on HIGH for a few minutes to reduce. Also, resist the urge to stir during cooking; leaving the layers intact helps the flavors develop.

How to tell it’s done

The dish is done when the beef is fork-tender and easily shreds, typically after 6 to 8 hours on LOW or 3 to 4 hours on HIGH. The sauce should be bubbly and slightly thickened, and the cheese completely melted.

For food safety, the beef must reach an internal temperature of 145°F (63°C) when checked with an instant-read thermometer; the low heat of the slow cooker will exceed this easily. Let the meat rest for at least 3 minutes before serving.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
