Tips for success
For the best texture, use freshly shredded cheese—it melts into a smooth, stretchy layer, while pre-shredded cheese can turn grainy. If you want a little extra heat, stir a finely chopped jalapeño into the beef or sprinkle red pepper flakes over the cheese before cooking.
To keep the dip warm for hours, set the slow cooker to the 'warm' setting after the initial cooking time, and stir occasionally to prevent the edges from drying.
When serving, provide sturdy tortilla chips that can hold up to the thick dip. You can also serve with warm tortillas, toasted baguette slices, or fresh veggies like bell pepper strips and celery sticks for a lighter option.
If you have leftovers, reheat them gently in the microwave or on the stovetop, adding a splash of milk to restore creaminess. The dip also freezes well—just thaw overnight in the refrigerator and reheat.
Variations
- Chicken Taco Dip: Swap the ground beef for 2 cups of shredded cooked chicken (rotisserie or poached). Toss the chicken with taco seasoning before adding. Cook the same way, ensuring the chicken is heated through. The texture will be lighter but just as satisfying.
- Spicy Chorizo Dip: Replace the ground beef with 1 lb of fresh Mexican chorizo, removed from casings and browned. Omit the taco seasoning, as chorizo is highly seasoned. Cook and drain well before layering. This adds a smoky, spicy kick that pairs well with the cool toppings.
- Vegetarian Black Bean Dip: Skip the meat entirely and add an extra can of black beans, drained and rinsed, along with the refried beans. Use taco seasoning mixed into the beans for flavor. The dip will be hearty and protein-packed, perfect for vegetarians.
- Buffalo-Style Dip: Stir 1/2 cup of buffalo sauce into the cooked ground beef along with the taco seasoning. Replace the green chiles with chopped celery. Finish with a drizzle of ranch dressing instead of sour cream. This gives a spicy, tangy twist that buffalo wing lovers will enjoy.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk if needed.
- Freezer
- Freeze the dip (without fresh toppings) in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop or microwave.
- Reheat
- Reheat in the microwave in 30-second bursts, stirring between, or in a saucepan over low heat, stirring often.
Store leftover dip in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or reheat the whole batch in a saucepan over low heat, stirring frequently. Add a splash of milk or water to loosen the texture if it thickens.
You can brown the beef and season it up to 2 days ahead, then refrigerate it. Assemble the layers in the slow cooker the night before, cover, and refrigerate. In the morning, place the slow cooker on LOW and cook for 2 1/2 to 3 hours, as the dip will start cold. Add the fresh toppings just before serving.
Serving ideas
Serve this dip straight from the slow cooker to keep it warm and melty. Set out bowls of tortilla chips, and let guests scoop directly from the pot.
The dip is rich and filling, so a little goes a long way—plan for about 1/2 cup per person as an appetizer. For a game-day spread, pair it with other crowd-pleasers like wings, sliders, or a fresh green salad.
For a prettier presentation, you can transfer the dip to a serving platter and garnish with extra cilantro and a few lime wedges. However, the slow cooker keeps it warm, which is ideal for parties.
If you want to add a crunchy element, sprinkle crushed tortilla chips over the top just before serving. The combination of hot, creamy dip and crunchy chips is irresistible.
