Before you start

Before starting, bring the butter and egg to room temperature for even creaming and a smooth dough. Preheat the oven to 350°F (175°C) and grease 6 cups of a muffin tin thoroughly with nonstick spray or butter.

Measure all ingredients accurately, especially the flour — spoon it into the measuring cup and level it off. Set out the muffin tin, mixing bowls, and electric mixer so everything is within reach. The chocolate truffles should be at room temperature so they melt evenly during baking.

Ingredients at a glance (10)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 3/4 cup chocolate chips
  • 6 large dark chocolate truffles
  • vanilla bean gelato, for serving

Instructions

Mixing the Dough

  1. Cream the Butter and Sugars
Preheat the oven to 350°F (175°C). Grease 6 cups of a muffin tin with nonstick spray or butter. In a large bowl, beat the softened butter, brown sugar, and white sugar together with an electric mixer on medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl. Add the egg and vanilla extract, then beat until fully combined and smooth. The mixture should look creamy and slightly glossy.
Look for The butter-sugar mixture is pale, fluffy, and holds a soft peak when lifted with a spatula.
Tip Make sure the butter is truly softened to room temperature for the creaming step to work properly.
  2. Add the Dry Ingredients and Chips
Add the flour and baking soda to the butter mixture. Stir with a spatula or wooden spoon until just combined — do not overmix. Fold in the chocolate chips until evenly distributed. The dough will be soft and slightly sticky but should hold together when pressed. If the dough feels too sticky to handle, chill it for 10 minutes in the refrigerator.
Look for The dough is uniformly mixed with no dry flour streaks, and the chips are evenly scattered.
Tip Overmixing can make the cookie cups tough, so stop as soon as the flour disappears.

The butter-sugar mixture is pale, fluffy, and glossy. After adding the egg and vanilla, the mixture is smooth and creamy. Once the flour and baking soda are folded in, the dough is soft, slightly sticky, and holds together when pressed.

The chocolate chips are evenly distributed. The dough smells sweet and buttery, and the texture is pliable without being wet.

Assembling and Baking

  1. Assemble the Cookie Cups
Press about 1 tablespoon of dough into the bottom of each greased muffin cup, covering the base evenly. Place one large dark chocolate truffle in the center of each cup. Cover the truffle completely with the remaining dough, pressing the dough up the sides and sealing the top so no truffle is visible. Make sure the dough reaches about halfway up the muffin cup.
Look for Each muffin cup has a smooth, sealed dome of dough with no chocolate peeking through.
Tip Wet your fingers slightly to press the dough without sticking.
  2. Bake Until Golden
Bake the cookie cups in the preheated oven for 14 minutes, until the edges are golden brown and the tops are set but still slightly soft in the center. The truffle inside will melt completely during baking. Remove the muffin tin from the oven and let it cool in the pan for 5 minutes — this allows the cookie cups to firm up enough for easy unmolding.
Look for The edges are deep golden, the tops are puffed slightly, and the kitchen smells of warm chocolate.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Bake time may vary by oven; check at 12 minutes and add time if needed, but don't overbake or the lava will set.

The muffin cups are filled with dough, each hiding a truffle in the center. During baking, the edges turn golden brown and the tops puff slightly. The kitchen fills with the aroma of warm chocolate and caramelized sugar. The cups are set around the edges but soft in the center, and the truffles have melted into a liquid pool inside.

Unmolding and Serving

  1. Unmold and Serve Warm
After cooling in the pan for 5 minutes, carefully lift each cookie cup out with a spoon or small offset spatula. Place the warm cookie cups on serving plates. Immediately top each with a generous scoop of vanilla bean gelato. Serve right away while the chocolate center is still molten and the cookie edges are crisp.
Look for The cookie cups release cleanly from the pan and the gelato begins to melt slightly on contact.
Tip For clean unmolding, run a thin knife around the edges if needed, but the cups should slide out easily.

After cooling for 5 minutes, the cookie cups release easily from the pan. The tops are slightly domed and the edges are crisp. When topped with gelato, the cold cream begins to melt against the warm cookie. A spoon pressed into the center releases a thick river of molten chocolate that flows out dramatically.

Common mistakes

A common mistake is overbaking the cookie cups, which causes the chocolate center to set and lose its lava texture. Watch the timer closely and check at 12 minutes. Another issue is under-greasing the muffin tin, leading to stuck cups; grease generously.

Pressing the dough too thickly on the sides can prevent the truffle from melting, so keep the dough layer even and not too thick. If the dough is too sticky to handle, chill it briefly. Finally, avoid overmixing the dough, which can make the cups tough.

How to tell it’s done

The cookie cups are done when the edges are golden brown and the tops are set but still slightly soft to the touch. The center should feel firm enough that the cup holds its shape, but not hard.

To check for doneness, insert a toothpick into the edge of a cookie cup; it should come out with a few moist crumbs, but not wet batter. The internal temperature of the cookie dough should reach at least 160°F (71°C) to ensure the egg is fully cooked. Let the cups cool for 5 minutes in the pan before unmolding.
