Tips for success
For an extra-golden crust, brush the dough with egg yolk twice: once before adding the seeds and again right before baking.
This gives a deeper color and a shinier finish. Use a light hand to avoid dripping, which can cause sticking on the baking sheet.
If the dough tears while shaping, patch it with a small piece of scrap dough. Keep the edges of the dough circles slightly thicker than the center; this helps the sealed pot hold its shape.
Let the assembled pots rest for 10 minutes before baking to relax the gluten and prevent shrinking.
Variations
- Vegetarian Version: Replace the chicken with extra mushrooms, zucchini, or spinach. Sauté the vegetables with the onions and peppers until tender, then proceed with the same assembly and baking. The cheese can be increased to compensate for the missing protein.
- Spicy Southwestern: Add 1 teaspoon of chili powder and 1/2 teaspoon of cumin to the chicken filling. Use pepper jack cheese instead of kaşar, and top with a few pickled jalapeños before sealing. Serve with a dollop of sour cream.
- Herb and Garlic: Mix 2 cloves of minced garlic and 1 tablespoon of chopped fresh thyme into the chicken filling. Brush the dough with garlic butter before egg washing. Add a teaspoon of dried oregano to the dough for extra flavor.
- Breakfast Bread Pot: Use breakfast sausage instead of chicken, and add cooked potatoes. Substitute cheddar cheese for kaşar. Fill the dough with the sausage mixture and a beaten egg before sealing, then bake until the egg is set.
Storage and make-ahead
- Fridge
- Store leftover bread pot pies in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven for 10-12 minutes until hot and crisp.
- Freezer
- Baked bread pot pies can be frozen for up to 2 months. Cool completely, wrap tightly in foil and plastic, and freeze.
- Reheat
- Reheat thawed or refrigerated bread pot pies in a 350°F (175°C) oven for 15-20 minutes, or until heated through and crust is crisp again.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The crust may soften slightly, but reheating in a 350°F (175°C) oven for 10 minutes will restore some crispness. Avoid microwaving, as it makes the bread soggy.
The chicken filling can be prepared up to 2 days in advance and kept refrigerated. Assemble the bread pots up to 4 hours ahead, cover with plastic wrap, and refrigerate.
Brush with egg wash just before baking. If baking directly from the fridge, add 5 minutes to the baking time.
Serving ideas
Serve the bread pot pies hot, straight from the oven, as a dramatic main course. Place each pot on a plate and let everyone lift the lid themselves for the full reveal.
The bread pot is entirely edible, so diners can tear off pieces to dip into the cheesy filling.
Pair with a simple green salad or roasted vegetables to balance the richness. For a casual dinner, set out extra shredded cheese and hot sauce for customizing. The pots are also great for parties—make them smaller and serve as appetizers.

Molten Cheesy Chicken Bread Pot Pie

Ingredients
- 1 lb pizza dough, store-bought or homemade
- 12 oz chicken breast, cut into small cubes
- 1 medium yellow onion, thinly sliced
- 1 medium green bell pepper, diced
- 1 1/2 cups kaşar cheese, shredded
- 1 large egg yolk, beaten
- 1 tsp nigella seeds
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat olive oil in a skillet over medium-high heat. Add the cubed chicken breast and cook until no longer pink, about 5 minutes. Season with salt and black pepper. Add the sliced onion and diced green pepper, cooking until softened and lightly caramelized, about 5 more minutes. Remove from heat and let cool slightly.
- Lightly flour a work surface. Divide the pizza dough into four equal portions. Roll each portion into a thin circle about 8 inches wide. Place each circle into a glass ramekin or oven-safe cup, pressing gently so the dough lines the bottom and sides, leaving a slight overhang.
- Spoon the cooled chicken mixture into each dough-lined ramekin, filling about three-quarters full. Top with a generous handful of shredded kaşar cheese. Gather the overhanging dough over the filling, pleating and pinching to seal completely into a round pot shape. Carefully invert each pot onto a baking sheet.
- Use any remaining dough to form a long rope. Braid or twist the rope and attach it around the base of each inverted pot as a decorative rim. Shape a small dough ball for a knob and place on top. Press gently to adhere.
- Brush the entire surface of each bread pot with beaten egg yolk, covering all exposed dough. Sprinkle nigella seeds evenly over the top.
- Preheat oven to 375°F (190°C). Bake the bread pots for 22 minutes, or until puffed, shiny, and deep golden brown. The internal temperature of the chicken should reach 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before serving. To serve, lift the braided lid with a fork to reveal the molten cheese and chicken inside.
