Tips for success
For the most tender results, cook the roast on LOW for 8 hours. If you're short on time, HIGH for 4-5 hours works, but the meat won't be quite as fork-tender.
Letting the roast rest for at least 3 minutes before shredding allows the juices to redistribute, keeping the meat moist. Shred the beef while it's still warm for the best texture.
The gravy is the star of this dish. If it seems too thin after shredding, you can thicken it with a slurry of cornstarch and water.
Just whisk 1 tablespoon cornstarch with 2 tablespoons cold water, stir it into the slow cooker, and let it simmer for 5 minutes. For extra flavor, add a splash of pepperoncini brine to the pot before serving.
Variations
- Spicy Mississippi Pot Roast: Add 1/4 cup of pepperoncini brine and a teaspoon of crushed red pepper flakes to the slow cooker before cooking. This gives the gravy an extra tangy kick.
- Pot Roast Sandwiches: Shred the beef and pile it onto toasted hoagie rolls. Top with provolone cheese and broil until melted. Serve with extra gravy for dipping.
- Low-Carb Version: Serve the pot roast over cauliflower mash or roasted zucchini noodles instead of mashed potatoes. The gravy is naturally low-carb, so the dish fits a keto lifestyle.
- Add Mushrooms: Add 8 oz sliced cremini mushrooms to the slow cooker along with the roast. They'll soak up the gravy and add an earthy flavor.

Store leftover pot roast in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the gravy. The flavors only get better the next day.

Or, cook the pot roast fully, shred it, and store it in the refrigerator for up to 3 days. Reheat in a saucepan over medium heat until warmed through.
Serving ideas
Serve the Mississippi pot roast over a bed of creamy mashed potatoes, letting the gravy soak into the spuds.
You can also serve it on toasted hoagie rolls for a hearty sandwich, or alongside roasted vegetables for a lighter option. The tangy pepperoncini are a must—they add brightness and cut through the richness.
For a complete meal, add a simple green salad or steamed green beans on the side. The pot roast is also delicious over egg noodles or rice. Leftovers can be used to make pot roast tacos, nachos, or a hearty hash. This recipe is endlessly versatile and always satisfying.

Mississippi Pot Roast: Dump-and-Go Slow Cooker Dinner

Ingredients
- 3 1/2 lb beef chuck roast
- 1 packet dry buttermilk ranch seasoning
- 1 packet au jus gravy mix
- 8 pepperoncini peppers
- 1/2 cup unsalted butter (1 stick)
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Sprinkle the dry buttermilk ranch seasoning and au jus gravy mix evenly over the top of the roast. Scatter the pepperoncini peppers around the roast and place the stick of butter on top. Do not add any liquid—the roast will create its own juices.
- Cover the slow cooker with the lid. Cook on LOW for 8 hours, or on HIGH for 4-5 hours, until the beef is fork-tender and easily shreds. Do not open the lid during cooking—the steam helps break down the meat. Let it rest for 3 minutes before slicing.
- Once the roast is tender, transfer it to a cutting board. Use two forks to shred the beef into bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the juices. Let it rest for 3 minutes before slicing.
- Stir the shredded beef into the gravy until well coated. Let it simmer in the slow cooker on LOW for an additional 15-20 minutes to blend the flavors. The gravy will thicken slightly as it simmers. Let it rest for 3 minutes before slicing.
- Spoon the Mississippi pot roast over hot mashed potatoes, making sure to include plenty of the buttery pepperoncini gravy. Serve immediately, with extra pepperoncini on the side if desired.
