Before you start

Before beginning, ensure all ingredients are measured and ready. Preheat your oven to 375°F (190°C) to allow for a consistent baking environment. Prepare the pepper jack sauce if it is not store-bought. Have your colander and mixing bowl cleaned and accessible.

Clear enough counter space to assemble the dish comfortably. Ensure the baking dish is clean and dry. Taking these steps before starting will streamline the assembly process and ensure the pasta remains warm until it enters the oven.

Ingredients at a glance (3)
  • 1 lb elbow macaroni, cooked al dente
  • 2 cups pepper jack milk sauce with corn and chili powder
  • 3/4 cup cotija cheese, crumbled

Instructions

Pasta Preparation

  1. Prepare the pasta base
Preheat the oven to 375°F (190°C). Cook the elbow macaroni in a large pot of salted boiling water until al dente, then drain thoroughly using a colander. Transfer the cooked macaroni into the rectangular ceramic baking dish, spreading it out into an even layer to ensure consistent baking.
Look for macaroni is tender but firm to the bite
Tip Do not overcook the pasta, as it will continue to soften while baking in the sauce.

The macaroni should be boiled until al dente, meaning it is tender but still offers a slight resistance when bitten. Once drained, it should be placed in the baking dish without any excess water, as this would dilute the sauce. Ensure the pasta is spread evenly across the surface of the dish to create a uniform base for the sauce and topping.

Sauce Integration

  1. Combine and assemble
Pour the pepper jack milk sauce, which includes corn and chili powder, evenly over the layer of macaroni in the baking dish. Use a large spoon to gently stir the mixture, ensuring every piece of pasta is coated in the creamy sauce and the corn is distributed throughout the dish.
Look for sauce is evenly distributed and pasta is well coated
Tip Ensure the sauce covers the corners of the dish to prevent the pasta from drying out during the bake.

The pepper jack milk sauce should be thick enough to coat the back of a spoon. When combined with the macaroni, the sauce should coat every piece of pasta thoroughly. Look for an even distribution of corn throughout the pasta. If the mixture appears too dry, ensure all the sauce has been added and stirred well into the pasta, reaching the bottom of the dish.

Baking and Finishing

  1. Top and bake
Evenly crumble the cotija cheese over the top of the macaroni mixture. Place the dish into the preheated oven and bake for approximately 20 to 25 minutes, or until the edges are bubbling and the top is golden. Remove from the oven and let it rest for 5 minutes before serving.
Look for cheese is slightly golden and the sauce is bubbling at the edges
Tip Watch the top closely during the final minutes to ensure the cheese browns without burning.

After baking, the dish will appear golden on the top with visible bubbles along the edges. The cotija cheese should be slightly toasted and firm to the touch. The scent of melted cheese and chili powder should be fragrant.

Let the dish rest for five minutes to allow the sauce to thicken before serving. The internal texture should be creamy and consistent throughout the entire baking dish.

Common mistakes

Avoid overcooking the macaroni during the initial boiling stage; it should be al dente, as it will continue to cook in the oven. Do not skip the resting period after baking, as this allows the sauce to set and makes serving much easier.

Avoid using too much cheese on the top, which can lead to burning, and ensure the sauce is evenly distributed to prevent any pasta from drying out during the baking phase.

How to tell it’s done

The dish is considered done when the sauce is bubbling vigorously around the edges of the baking dish and the top is lightly golden in several spots. The cheese should be melted and incorporated into the surface.

Use a serving spoon to lift a portion from the center; the macaroni should be soft, and the sauce should appear thick and creamy. Ensure the entire dish is heated through before removing it from the oven to serve.
