Before you start

Before you begin, ensure all ingredients are measured and ready to use. Preheat your oven to 375°F (190°C) so it reaches the target temperature by the time your assembly is complete. Have your 9x13 inch baking dish cleaned and lightly greased to prevent sticking.

If you are using a cornbread mix, prepare the batter according to the package instructions beforehand so it is ready to pour as soon as the meat mixture is cooked and transferred to the dish.

Ingredients at a glance (4)
  • 1 lb ground beef
  • 1 cup canned corn, drained
  • 3 cups prepared cornbread batter
  • 2 cups shredded cheese

Instructions

Browning the base

  1. Prepare the filling
Heat a large skillet over medium-high heat. Add the ground beef and cook until browned and fully cooked through, reaching an internal temperature of at least 160°F (71°C). Drain any excess fat if necessary. Stir in the canned corn and combine well to ensure the flavors are distributed evenly throughout the mixture.
Look for The beef should be browned, crumbled, and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the beef is seasoned well with your preferred taco spices before adding the corn.

The ground beef should be deeply browned and crumbled into small, uniform pieces. Once the corn is added, the mixture should look cohesive and smell fragrant. Ensure there is no excess liquid pooling in the skillet before you proceed to transfer the mixture to the baking dish, as this maintains the desired texture of the final casserole.

Layering the casserole

  1. Assemble the casserole
Transfer the seasoned beef and corn mixture into the bottom of a 9x13 inch glass baking dish, spreading it into an even layer. Pour the prepared cornbread batter directly over the beef mixture, using a spatula to smooth the top so the beef is completely covered. Sprinkle the shredded cheese evenly across the top of the batter.
Look for The batter should create a smooth, even layer over the meat.
Tip Do not overmix the cornbread batter; a few lumps are perfectly fine for a tender crumb.

The beef and corn base must be spread into a perfectly even layer across the bottom of the dish to ensure every serving has the same ratio of ingredients.

As you pour the cornbread batter, make sure it reaches all four corners of the dish. The cheese should be sprinkled in a uniform layer that covers the entire surface for a consistent crust.

Final bake

  1. Bake to perfection
Place the baking dish into a preheated oven at 375°F (190°C). Bake for approximately 25 to 30 minutes, or until the cornbread is golden brown and the cheese is bubbling and melted. Remove from the oven and allow it to rest for at least 5 minutes before serving to ensure the structure sets properly for clean scooping.
Look for The top should be golden brown and the cheese should be bubbling.
Tip Check the center with a toothpick to ensure the cornbread is fully baked.

At the end of the baking time, the kitchen should be filled with the aroma of toasted corn and melted cheese. The cornbread will have risen slightly and should feel springy when gently pressed. The cheese will have formed a golden, bubbling layer that stretches when you pull a serving out with a spatula, confirming the casserole is ready.

Common mistakes

A common mistake is using a baking dish that is too small, which can lead to the cornbread overflowing or baking unevenly. Ensure you have the correct 9x13 inch dimensions.

Another error is failing to drain the fat from the ground beef after browning; excess fat can make the base soggy and prevent the cornbread from adhering properly. Finally, avoid cutting into the casserole immediately upon removing it from the oven, as the layers need time to set to avoid falling apart when served.

How to tell it’s done

The casserole is done when the cornbread topping is firm to the touch and golden brown in color. A toothpick inserted into the center of the cornbread should come out clean, without any wet batter attached.

The cheese on top should be completely melted, bubbling, and slightly browned in spots. Since the ground meat was pre-cooked to 160°F (71°C), the internal temperature of the entire dish will safely exceed this threshold during the final baking phase.

  • Ground meat: 160°F (71°C) in the thickest part
