Before you start

Before beginning, organize all your ingredients to ensure a smooth assembly process. Remove the pizza dough from the refrigerator at least 30 minutes before you intend to roll it out, as cold dough is difficult to stretch and prone to tearing. Prepare your baking sheet with parchment paper to prevent sticking.

Have your skillet, knife, and rolling pin ready, and ensure you have enough counter space to comfortably roll out the dough into a large rectangle. Preheating your oven is also a critical step to ensure the dough begins cooking immediately upon entry.

Ingredients at a glance (5)
  • 1 lb pizza dough, store-bought or made ahead
  • 1/2 lb ground beef
  • 1/2 cup marinara sauce, store-bought or made ahead
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup pepperoni slices

Instructions

Cooking the meat filling

  1. Prepare the meat filling
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small crumbles with a spatula, until it is browned and no longer pink. Ensure the meat reaches an internal temperature of 160°F (71°C). Drain any excess fat from the skillet and set the meat aside to cool slightly.
Look for The beef should be fully browned and crumbly with no visible pink remaining.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Season the beef with a pinch of salt and pepper while cooking for extra flavor.

The ground beef should be fully browned with no pink visible. The fat should be mostly rendered and drained, leaving a dry, flavorful base for the pizza bread. Ensure the skillet is wiped clean of excess grease before moving to the assembly phase to keep the dough crisp.

Assembling and braiding

  1. Assemble the pizza bread
Preheat the oven to 400°F (200°C). Roll out the pizza dough on a floured surface into a large rectangle. Spread the marinara sauce down the center, leaving space at the edges. Layer the cooked ground beef, mozzarella cheese, and pepperoni slices over the sauce. Cut diagonal strips into the dough on both sides of the filling and braid them over the top to enclose the ingredients.
Look for The braid should be tight enough to hold the filling securely inside the dough.
Tip Use a light dusting of flour on your rolling pin to prevent the dough from sticking.

The dough should be rolled into a uniform rectangle to ensure even cooking. The filling must be placed in a neat line down the center, and the braids should be pulled snugly across the top. Check that the seams are tucked under the loaf to prevent any gaps during the baking process.

Baking until golden

  1. Bake and serve
Transfer the braided loaf to a parchment-lined baking sheet. Bake for 20 to 25 minutes or until the crust is golden brown and the cheese is melted and bubbling. Remove from the oven and let the loaf rest for 5 minutes on the baking sheet before slicing. Serve warm to enjoy the gooey cheese pull.
Look for The crust should be golden brown and sound hollow when tapped lightly.
Tip Brush the top of the dough with a little olive oil for a glossier finish.

The finished loaf will be puffed and golden brown on all sides. The cheese should be visible and bubbling through the braids, signaling that the interior is hot. Let the bread sit on the pan for a few minutes before transferring it to a cutting board to ensure the structure stays intact.

Common mistakes

A common mistake is overloading the center of the dough with too much sauce, which can lead to a soggy bottom that fails to crisp up. Stick to the recommended amount to ensure the dough remains sturdy.

Another error is failing to seal the ends of the braid properly; pinch the dough edges together firmly to prevent the molten cheese from leaking during the baking process. Finally, avoid cutting the loaf immediately after it comes out of the oven, as the steam and hot cheese need a moment to stabilize for clean slices.

How to tell it’s done

The pizza bread is done when the crust is a deep golden brown and feels firm to the touch. The cheese should be completely melted and bubbling through the braided gaps.

If you have a kitchen thermometer, you can check the internal temperature of the filling, which should reach at least 160°F (71°C) to ensure the meat is fully heated through.

Allow the loaf to rest for 5 minutes after removing it from the oven, as this allows the cheese to set slightly, making it easier to slice without the filling spilling out.

  • Ground meat: 160°F (71°C) in the thickest part
