Tips for success

For the most vibrant green color, use ceremonial grade matcha. It has a brighter hue and a smoother flavor than culinary grade. When measuring matcha, be precise: too much can make the brownies bitter, while too little will result in a pale green. Sift the matcha into the blondie batter to avoid clumps. Whisk thoroughly to ensure it is fully dissolved. A bamboo matcha whisk, if available, works beautifully for this purpose.

To achieve clean, neat cuts, use a large, sharp knife and wipe it with a damp cloth between each cut. This prevents the brownies from sticking to the blade and ensures smooth edges.

If the brownies are slightly underbaked in the center, they may be difficult to cut; chill them in the refrigerator for 30 minutes before slicing. These brownies are best served at room temperature, when the texture is soft and fudgy. If refrigerated, let them come to room temperature before serving.

Variations

  • Nutty Crunch: Fold 1/2 cup of chopped macadamia nuts or white chocolate chunks into the matcha blondie batter before swirling. The nuts add a buttery crunch that complements the earthy matcha and rich chocolate. Toast the nuts lightly for extra flavor.
  • Citrus Zest: Add 1 tablespoon of finely grated lemon or orange zest to the matcha blondie batter. The citrus brightens the matcha and adds a refreshing twist. The zest also enhances the green color of the matcha, making the swirl even more vibrant.
  • Coconut Matcha: Replace half of the butter in the blondie batter with coconut oil and fold in 1/2 cup of shredded coconut. This adds a subtle tropical flavor and a chewy texture that pairs beautifully with the matcha and dark chocolate. Use unsweetened coconut for a less sweet result.
  • Berry Swirl: Before swirling the batters, drop spoonfuls of raspberry or strawberry jam on top of the matcha layer. Then swirl gently to create a tri-color effect. The tartness of the berries cuts through the sweetness and adds a fruity note that complements both matcha and chocolate.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature before serving for best texture and flavor.
Freezer
Wrap tightly in plastic wrap and freeze for up to 3 months. Thaw at room temperature or overnight in the refrigerator.
Reheat
To reheat, place brownies on a baking sheet in a 300°F oven for 5-7 minutes, or microwave for 15 seconds. Serve warm for a gooey texture.

Store the matcha swirl brownies in an airtight container at room temperature for up to 3 days. If the weather is warm, you can refrigerate them, but bring them to room temperature before serving for the best texture.

To prevent the brownies from drying out, place a piece of bread in the container; the bread will absorb excess moisture and keep the brownies soft. For longer storage, freeze the brownies in a single layer in an airtight container or freezer bag for up to 3 months.

These brownies can be made up to 2 days ahead and stored in an airtight container at room temperature. They can also be frozen for up to 3 months. To freeze, wrap the cooled brownies tightly in plastic wrap, then place them in a freezer-safe bag. Thaw in the refrigerator overnight or at room temperature for a few hours. The brownies retain their flavor and texture well, making them a great make-ahead dessert for parties and gatherings.

Serving ideas

Serve these matcha swirl brownies as a stunning dessert for afternoon tea, brunch, or any celebration. The vibrant green and dark chocolate contrast makes them a visual centerpiece. Pair them with a cup of green tea or a glass of cold milk for a delightful treat.

For an extra touch, dust the top with a little extra matcha powder just before serving, or add a scoop of vanilla ice cream on the side. The combination of warm brownie and cold ice cream is irresistible.

These brownies are also wonderful for gifting. Arrange them in a decorative box or tin, and they become a beautiful present for friends and family. The unique flavor and appearance make them a memorable homemade gift.

For a more elegant presentation, cut them into smaller squares and serve them on a platter with fresh berries or a dollop of whipped cream. The earthy matcha pairs surprisingly well with berries, especially strawberries and raspberries.

Frequently asked questions

Why does the matcha turn brown during baking?
Matcha can turn brown if exposed to high heat for too long. To preserve the vibrant green color, bake at a moderate temperature (325°F) and avoid overbaking. Using high-quality ceremonial grade matcha also helps, as it is more resistant to color change. Remove the brownies from the oven as soon as the center is set.
Can this recipe be made gluten-free?
Yes, you can substitute the all-purpose flour in both batters with a 1:1 gluten-free flour blend. Ensure the blend contains xanthan gum for structure. The texture may be slightly different but still delicious. Also check that your white chocolate and dark chocolate are gluten-free, as some brands may contain wheat-based additives.
Can the brownies be made without eggs?
Eggs provide structure and moisture. For an egg-free version, use a commercial egg replacer or a mixture of flaxseed and water. However, the texture will be more cakey and less fudgy. You may also need to adjust the baking time. Note that the safe internal temperature for egg-free brownies is not applicable, but they should still be fully baked.
How should the brownies be stored to keep them fresh?
Store the brownies in an airtight container at room temperature for up to 3 days. If you live in a humid climate, refrigerate them to prevent mold. To keep them moist, add a slice of bread to the container. For longer storage, freeze the brownies for up to 3 months; thaw at room temperature before serving.
Can the swirl be made more pronounced?
To achieve a more pronounced swirl, make sure the batters are thick and not too runny. Use a knife to make a few large figure-eight motions, then stop. Overmixing will blend the colors. You can also layer the batters in a checkerboard pattern before swirling for a more defined design.

Ingredients

  • 1 batch dark chocolate fudge batter
  • 1 batch white chocolate blondie batter
  • 2 tbsp ceremonial grade matcha powder

Instructions

  1. Prepare the dark chocolate fudge batter according to your favorite recipe. In a separate bowl, prepare the white chocolate blondie batter. Whisk the ceremonial matcha powder into the blondie batter until completely smooth and no green streaks remain.
  2. Pour the dark chocolate fudge batter into a 9x9-inch baking pan lined with parchment paper. Spread it evenly. Pour the matcha white chocolate blondie batter on top, spreading it gently to cover the dark layer.
  3. Using a knife or skewer, gently swirl the two batters together in a figure-eight motion. Do not overmix; you want distinct ribbons of green and dark chocolate.
  4. Preheat the oven to 325°F (163°C). Bake the brownies for 25 minutes, or until the edges are set and the center is just moist but not wet. A toothpick inserted into the center should come out with a few moist crumbs.
  5. Remove the brownies from the oven and let them cool in the pan on a wire rack for at least 1 hour. Once completely cool, lift the brownies out using the parchment paper and cut into squares.
  6. Cut the brownies into 16 equal squares. Serve at room temperature. The contrast between the dark chocolate base and the bright green matcha swirl will be most striking when the brownies are fully cooled.
