Tips for success
For the best swirl, use a thin knife or skewer and draw a gentle figure-eight pattern. Move the knife through the batter in one continuous motion, but don't overdo it—about three passes is perfect.
If you want a more dramatic pattern, you can layer the batters in three or four alternating layers instead of just two.
To ensure the cake releases easily, use a high-quality nonstick loaf pan and line it with parchment paper. Let the cake cool in the pan for 10 minutes before lifting it out; this allows the structure to set. For clean slices, use a serrated knife and wipe it between cuts.
Variations
- Citrus Marble: Add the zest of one orange or lemon to the butter-sugar mixture for a bright citrus flavor. You can also replace the vanilla extract with orange blossom water for a floral note.
- Coffee Marble: Dissolve 1 tablespoon of instant coffee in 1 tablespoon of hot water and add it to the chocolate batter. This deepens the chocolate flavor and adds a subtle mocha taste.
- Almond Marble: Substitute 1/4 cup of the flour with almond flour for a nutty flavor. Add 1/2 teaspoon of almond extract along with the vanilla. Be aware of tree nut allergens.
- Chocolate Chip Marble: Fold 1/2 cup of mini chocolate chips into the vanilla batter before layering. The chips add extra chocolate pockets throughout the cake.

Marble Butter Loaf Cake with a Perfect Swirl

Ingredients
- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 cup whole milk
- 2 tsp pure vanilla extract
- 2 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsweetened cocoa powder
- 1 tbsp confectioners' sugar, for dusting
Instructions
- Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper, leaving overhang on two sides. In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter and sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Mix in the milk and vanilla extract until combined.
- Reduce the mixer speed to low and gradually add the flour mixture to the butter mixture, mixing just until no streaks of flour remain. Do not overmix.
- Spoon half of the vanilla batter into a separate bowl. Sift the cocoa powder over one portion and gently fold with a spatula until the cocoa is fully incorporated, creating the chocolate batter.
- Using two spoons or small scoops, alternate spoonfuls of vanilla and chocolate batter into the prepared loaf pan, placing them in a checkerboard pattern. Continue until all batter is used, then gently tap the pan on the counter to release air bubbles.
- Insert a butter knife or skewer into the batter and draw a figure-eight pattern through the pan, moving the knife from one end to the other. Be careful not to overdo it—about three passes is enough.
- Place the pan in the preheated oven and bake for 45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden and domed. If the top browns too quickly, tent loosely with foil.
- Remove the loaf from the oven and let it cool in the pan on a wire rack for 10 minutes. Then lift it out using the parchment overhang and let it cool completely on the rack. Once cool, dust the top with confectioners' sugar.
- Using a serrated knife, slice the loaf into thick pieces to reveal the zebra swirl. Serve with hot tea or coffee.
