Before you start

Before you begin, ensure your oven is preheated to 350°F (175°C). Prepare your ingredients by cutting the bread into uniform cubes to ensure even cooking.

If you are cooking the sausage fresh, do so ahead of time and allow it to cool slightly before assembling the dish, as this prevents the bread from becoming soggy before it hits the oven.

Ingredients at a glance (4)
  • 1 lb thick white bread cubes
  • 1 lb breakfast sausage links, cooked
  • 2 cups maple custard
  • 1/2 cup brown sugar

Instructions

Assembling the base

  1. Assemble the base
Place the thick white bread cubes into a large rectangular ceramic baking dish. Add the pre-cooked breakfast sausage links, tucking them evenly between the bread cubes to ensure every serving gets a portion of meat.
Look for The dish is evenly filled with bread and sausage.
Tip Use stale bread for better absorption of the custard.

The bread cubes should be arranged in a single layer or slightly overlapping, with the cooked sausage links tucked into the gaps.

The dish should look full and prepared, with the ingredients ready to receive the custard mixture.

Soaking and seasoning

  1. Soak and season
Pour the maple custard evenly over the bread and sausage mixture in the baking dish. Ensure all pieces are thoroughly soaked. Sprinkle the brown sugar evenly over the top of the bread and sausage.
Look for The bread is fully saturated with the custard.
Tip Let the dish sit for a few minutes so the bread absorbs the liquid.

Check that the custard has reached the bottom of the dish by gently pressing down on the bread. The brown sugar should be evenly distributed across the top, ready to caramelize during the baking process.

Baking the casserole

  1. Bake the casserole
Place the dish into an oven preheated to 350°F (175°C). Bake until the top is golden and puffed, and the internal temperature of the egg-based custard reaches 160°F (71°C).
Look for The top is puffed and golden brown.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Check the center with a knife to ensure it is set.

The final product should be visibly puffed and golden brown. You will smell the aroma of toasted maple and savory sausage. The center should feel firm to the touch, and the custard should be fully set.

Common mistakes

Avoid over-soaking the bread for too long, as this can lead to a soggy texture rather than the desired custardy consistency.

Ensure the brown sugar is sprinkled evenly across the entire surface to avoid concentrated spots of sweetness. Finally, do not skip the resting period, as this allows the custard to firm up and makes serving much easier.

How to tell it’s done

The French toast bake is done when the surface is puffed and golden brown. When you insert a knife into the center, it should come out clean, and the custard should be fully set.

The internal temperature of the custard must reach 160°F (71°C) to ensure the eggs are thoroughly cooked. Let the dish rest for five minutes before serving.

  • Ground meat: 160°F (71°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
