Tips for success
For extra depth, sear the beef chuck roast in a hot skillet with a little oil until browned on all sides before adding it to the slow cooker. This isn't in the video but adds a rich crust.
If you do, reduce the salt in the glaze slightly, as the sear adds savory notes. Also, try adding a splash of apple cider vinegar at the end to brighten the jus.
To make the sweet potato mash, roast halved sweet potatoes at 400°F (200°C) until soft, then mash with roasted garlic, butter, and a splash of cream. The mash soaks up the bourbon jus beautifully.
For a dairy-free version, use olive oil and a little broth. The Dijon drizzle is just a spoonful of whole-grain mustard mixed with a teaspoon of maple syrup—it adds a tangy-sweet finish.
Variations
- Spicy Maple Bourbon: Add 1-2 minced chipotle peppers in adobo sauce to the glaze for a smoky heat. The spice cuts through the sweetness and adds a layer of complexity. Serve with a cooling dollop of sour cream.
- Apple-Bourbon: Replace the parsnips with 2 cups of peeled, cubed apples (like Honeycrisp). They'll soften and release their juices, making the jus even more fruity. Use apple cider instead of bourbon for a non-alcoholic version.
- Herb-Rubbed: Before adding the glaze, rub the roast with a mixture of dried thyme, rosemary, and smoked paprika. The herbs infuse the meat as it cooks, giving it an earthy, savory note that pairs well with the maple.
- Root Vegetable Medley: Swap half the parsnips for carrots and turnips. Cut all vegetables into similar-sized cubes to ensure even cooking. The mix of colors and flavors makes the dish more vibrant and hearty.
Storage and make-ahead
- Fridge
- Store shredded beef and parsnips in an airtight container in the fridge for up to 4 days. The sweet potato mash keeps for 3 days.
- Freezer
- Freeze shredded beef in portion-sized containers for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low, adding a splash of water or broth to loosen the jus. Microwave in 30-second bursts, stirring between, until hot.
Store leftover shredded beef and parsnips in an airtight container in the refrigerator for up to 4 days. The flavors meld and deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the jus has thickened. The sweet potato mash keeps separately for up to 3 days.
This recipe is perfect for meal prep. Assemble the slow cooker the night before, cover, and refrigerate. In the morning, place the pot in the slow cooker base and cook on low for 7.5 hours.
You can also cook the full recipe, shred the beef, and freeze in portion-sized containers for up to 3 months. Thaw overnight in the fridge before reheating.
Serving ideas
Serve the shredded beef over a generous scoop of roasted garlic sweet potato mash, spooning the bourbon-maple jus over the top. The sweetness of the mash balances the tangy Dijon and the rich beef.
A final drizzle of whole-grain mustard adds a bright, peppery kick. This is a complete meal in a bowl, but it also pairs well with a simple green salad or roasted Brussels sprouts.
For a casual gathering, set up a bar with the shredded beef, mash, and toppings like crispy fried onions, pickled jalapeños, or fresh herbs. Let guests build their own plates. The leftovers make excellent sandwiches—pile the beef on brioche buns with a smear of Dijon and a handful of arugula. The jus is perfect for dipping.

Maple Bourbon Dijon Crockpot Roast: Sweet & Smoky

Ingredients
- 3 lb beef chuck roast
- 400 g parsnips, peeled and cubed (about 3 cups)
- 80 ml pure maple syrup (about 1/3 cup)
- 60 ml Kentucky bourbon (about 1/4 cup)
- 45 g whole-grain Dijon mustard (about 3 tbsp)
- 4 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Roasted garlic sweet potato mash, for serving
- Dijon mustard, for drizzling, to taste
Instructions
- Place the beef chuck roast in the slow cooker basin. Scatter the cubed parsnips around and on top of the roast. In a small bowl, whisk together the maple syrup, bourbon, whole-grain Dijon mustard, minced garlic, salt, and black pepper until well combined. Pour the glaze evenly over the roast and parsnips, turning the roast to coat all sides.
- Arrange the parsnips in a single layer at the bottom of the slow cooker, then place the beef roast on top. This keeps the parsnips from becoming too soft while the beef cooks low and slow. Pour the glaze mixture over everything, using a spatula to scrape every bit of the bourbon-maple mixture into the pot.
- Cover the slow cooker with the lid and cook on LOW for 7.5 hours. Resist the urge to lift the lid during cooking; the steam trapped inside helps the collagen in the chuck roast break down, making the meat fork-tender. The glaze will bubble and caramelize around the edges of the pot as it cooks.
- After 7.5 hours, insert a fork into the thickest part of the roast. The fork should slide in with little resistance, and the meat should begin to pull apart easily. If it's not quite there, continue cooking on LOW for another 30 minutes and test again. The internal temperature should reach at least 145°F (63°C) for safe consumption, but the collagen breakdown is what makes it shreddable. Let it rest for 3 minutes before slicing.
- Remove the roast from the slow cooker and place it on a cutting board. Using two forks, shred the beef into bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the bubbling jus, allowing it to soak up the sauce for a few minutes.
- After shredding, let the beef rest in the warm jus for at least 3 minutes before serving. This allows the juices to redistribute and the meat to absorb more of the maple-bourbon glaze. Keep the slow cooker on the 'Warm' setting while you prepare the serving plates.
- Spoon a generous portion of roasted garlic sweet potato mash onto each plate. Top with the shredded beef and a ladle of the bourbon-maple jus. Drizzle a little extra Dijon mustard over the top for a bright, tangy finish. Serve immediately while hot.
