Before you start

Before you start, make sure your slow cooker is clean and ready. Measure out the honey and soy sauce, and have your mango and bell pepper diced.

If you like a thicker sauce, have cornstarch and water on hand for the optional thickening step. No need to preheat anything—this is truly a dump-and-go meal.

Ingredients at a glance (5)
  • 8 chicken drumsticks
  • 2 cups ripe mango cubes
  • 1 red bell pepper, diced
  • 1/3 cup honey
  • 1/4 cup soy sauce

Instructions

Prep and Layer

  1. Arrange the Chicken
Place the chicken drumsticks in the bottom of a 6-quart slow cooker, arranging them in a single layer or slightly overlapping if needed.
Look for The drumsticks should cover the bottom of the slow cooker evenly.
Tip No need to brown the chicken first—the slow cooker does all the work.
  2. Add the Fruit and Pepper
Scatter the mango cubes and diced red bell pepper over the chicken, spreading them evenly so they mingle with the meat.
Look for The mango and pepper should be distributed across the chicken.
Tip Use ripe but firm mango so it holds its shape during cooking.
  3. Pour the Sauce
In a small bowl, stir together the honey and soy sauce. Pour the mixture evenly over the chicken, mango, and pepper.
Look for The sauce should coat the top of the ingredients.
Tip For extra flavor, add a minced garlic clove or a pinch of red pepper flakes.

At this point, the raw chicken is nestled in the slow cooker, topped with bright mango cubes and red pepper. The honey-soy mixture is poured over, creating a glossy, amber coating. The ingredients look fresh and vibrant, ready to transform.

Slow Cook

  1. Cover and Cook Low
Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is tender and cooked through.
Look for The sauce will bubble gently around the edges.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking to keep the heat steady.
  2. Check for Doneness
After 4 hours, check the chicken: the internal temperature should read 165°F (74°C) on an instant-read thermometer inserted into the thickest part without touching bone.
Look for The meat should be pulling away from the bone and very tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chicken isn't done, continue cooking and check again in 30 minutes.

After several hours, the slow cooker is filled with a bubbling, aromatic sauce. The chicken has turned a deep golden brown, and the mango has softened into sweet, tender pieces.

The kitchen smells of sweet honey and savory soy, and the sauce is gently simmering around the edges.

Finish and Serve

  1. Thicken the Sauce (Optional)
If you prefer a thicker glaze, transfer the sauce to a small saucepan and simmer over medium heat for 5-7 minutes, or mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the slow cooker, then cook on HIGH for 15 minutes.
Look for The sauce should coat the back of a spoon.
Tip Be careful not to overcook the chicken while thickening the sauce.
  2. Serve
Serve the chicken drumsticks over steamed basmati rice, spooning the mango, peppers, and sticky sauce over the top.
Look for The chicken should be glossy and glazed.
Tip Garnish with fresh cilantro or green onions if desired.

The chicken is fall-off-the-bone tender, glazed with a sticky, amber sauce. The mango and peppers are soft and coated in the glaze. When you lift a drumstick, the meat easily pulls away, and the sauce drips slowly. Ready to serve over rice.

Common mistakes

One common mistake is lifting the lid too often to check on the food. Each time you lift the lid, heat escapes and extends the cooking time. Resist the urge to peek!

Another mistake is using underripe mango, which won't soften properly and will taste tart. Also, be careful not to overcook the chicken—while it's hard to dry out drumsticks in a slow cooker, they can become mushy if left too long.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part, without touching bone. The meat should be very tender and easily pull away from the bone.

The sauce should be bubbly and slightly thickened, and the mango should be soft but still intact. If the chicken isn't quite there, continue cooking and check again in 20-30 minutes.

  • Poultry: 165°F (74°C) in the thickest part
