Before you start

Before starting, pat the chicken drumsticks dry with paper towels. Dice the red bell pepper into 1/2-inch pieces and cut the mango into 1/2-inch cubes if using fresh. Measure the bourbon BBQ glaze and brown sugar so they are ready to pour. Have a 6-quart slow cooker clean and ready.

No need to preheat the slow cooker. If using frozen mango, thaw it in the refrigerator overnight or in a bowl of cold water for about 30 minutes, then drain well. The garlic mashed potatoes can be made ahead or prepared while the chicken cooks.

Ingredients at a glance (6)
  • 8 chicken drumsticks (about 2 1/2 lb)
  • 2 cups ripe mango cubes (about 2 mangoes)
  • 1 large red bell pepper, diced
  • 1 cup bourbon BBQ glaze
  • 1/4 cup dark brown sugar, packed
  • creamy garlic mashed potatoes, for serving

Instructions

Layer and Glaze

  1. Layer the Chicken and Produce
Place the chicken drumsticks in the slow cooker, arranging them in a single layer as much as possible. Scatter the mango cubes and diced red bell pepper over the chicken, spreading them evenly so they settle into the spaces between the drumsticks.
Look for The drumsticks should be nestled together with mango and pepper filling the gaps.
Tip No need to brown the chicken first — the slow cooker does all the work.
  2. Add the Glaze and Sugar
Pour the bourbon BBQ glaze evenly over the chicken, mango, and peppers. Sprinkle the dark brown sugar over the top, covering as much surface as possible. Do not stir; the layers will meld during cooking.
Look for The glaze should coat the top of the chicken and fruit in a thick, sugary layer.
Tip Resist stirring — keeping the sugar on top helps create a lacquer-like finish.

At the end of this phase, the slow cooker contains a neat layer of raw chicken drumsticks with mango cubes and diced red pepper scattered over the top. The bourbon BBQ glaze is poured over everything, and the brown sugar is sprinkled on top, creating a thick, sweet coating. The ingredients are not stirred, so the layers are visible: chicken on the bottom, fruit and pepper in the middle, and a glossy glaze on top. The raw chicken should look plump and pink, and the mango should be bright orange and fragrant.

Slow Cook

  1. Cover and Cook on Low
Cover the slow cooker and cook on low heat for 4 hours, or until the chicken is tender and registers 165°F (74°C) in the thickest part near the bone. The mango will soften and the glaze will thicken into a glossy sauce.
Look for The sauce should be bubbling gently around the edges and the chicken should look glossy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use an instant-read thermometer to check the temperature in the thickest part of a drumstick, not touching the bone.
  2. Check the Chicken for Doneness
After 4 hours, lift a drumstick with tongs — the meat should be pulling away from the bone and feel very tender. If not quite done, continue cooking in 20-minute increments until the internal temperature reaches 165°F (74°C).
Look for The meat should separate easily from the bone with little resistance.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thin, leave the lid off for the last 15 minutes to let it reduce.

After 4 hours on low, the slow cooker is bubbling gently around the edges. The chicken drumsticks have turned a deep mahogany color, and the glaze has thickened into a shiny lacquer. The mango cubes have softened and released their juices, and the red pepper pieces are tender but still hold their shape.

The aroma is rich and sweet with a hint of bourbon. When you lift a drumstick, the meat should be pulling away from the bone, and the sauce should coat the spoon thickly. The internal temperature should read 165°F (74°C).

Serve

  1. Plate the Chicken and Serve
Spoon a generous portion of creamy garlic mashed potatoes onto each plate. Use a serving spoon to lift the glazed chicken drumsticks and the tender mango and pepper pieces from the slow cooker, letting the extra glaze drip back into the pot. Arrange the chicken on top of the mashed potatoes and spoon a little extra glaze over everything.
Look for The chicken should be glistening with thick sauce and the mango should be soft but still holding its shape.
Tip For a neater plate, use a slotted spoon to lift the chicken and then spoon the sauce on top.

The chicken is plated on a bed of creamy garlic mashed potatoes, with the tender mango and pepper pieces spooned alongside. The glaze drips down the sides of the chicken, creating a glossy, appetizing finish. The steam rises from the plate, and the sweet bourbon aroma fills the air.

The mashed potatoes are smooth and buttery, ready to soak up the extra sauce. The dish looks rustic yet elegant, with the deep brown chicken contrasting against the bright orange mango and red pepper. Everything is hot and ready to eat.

Common mistakes

The most common mistake is opening the lid too often to check the chicken, which lets heat escape and extends the cooking time. Trust the process and keep the lid on. Another mistake is using unripe mangoes, which stay hard and tart — taste a piece before adding.

Overcrowding the slow cooker is also a problem: if the drumsticks are stacked too high, they may not cook evenly. Use a 6-quart slow cooker and arrange the chicken in a single layer if possible. Finally, do not skip the brown sugar — it is essential for the lacquer-like finish.

How to tell it’s done

The chicken is done when the internal temperature in the thickest part of a drumstick, not touching the bone, reaches 165°F (74°C). The meat should be very tender and pull away from the bone easily with a fork. The sauce should be thick and glossy, and the mango should be soft but not completely dissolved. If you prefer a thicker sauce, remove the lid and cook on high for the last 15 to 20 minutes to let the liquid reduce. Always let the chicken rest for a few minutes before serving so the juices redistribute.

  • Poultry: 165°F (74°C) in the thickest part
