Tips for success

To make this recipe even easier, you can prep the ginger and measure the honey and soy sauce the night before. Store everything in the refrigerator, then just dump it all into the slow cooker in the morning.

This is a great meal prep option for busy weeks. You can also double the recipe if you have a larger slow cooker, and freeze the leftovers for later.

For a thicker, more caramelized glaze, you can transfer the shredded chicken and sauce to a skillet and simmer over medium-high heat for 5-10 minutes, until the sauce reduces and becomes sticky.

This is especially good if you're serving the dish over rice and want the sauce to cling nicely. Just be careful not to burn the sugar in the honey.

Variations

  • Spicy Mandarin Chicken: Add 1-2 teaspoons of sriracha or red pepper flakes along with the honey-soy mixture for a subtle heat. The spice cuts through the sweetness and adds a new dimension to the dish.
  • Garlic Ginger Chicken: Add 3-4 minced garlic cloves along with the ginger. Garlic pairs beautifully with soy and honey, adding a savory depth that complements the citrus.
  • Orange Sesame Chicken: Stir in 1 tablespoon of toasted sesame oil and sprinkle with sesame seeds before serving. The nutty sesame flavor enhances the Asian-inspired profile.
  • Pineapple Soy Chicken: Replace the mandarin oranges with pineapple chunks (drained). Pineapple's natural sweetness and acidity work well with the soy sauce and ginger, creating a tropical twist.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.

To reheat, simply microwave in a microwave-safe dish until warmed through, or warm in a skillet over medium heat. Add a splash of water or chicken broth if the sauce has thickened too much.

This recipe is perfect for making ahead. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.

In the morning, simply place the insert in the slow cooker and cook as directed. Or, cook the full recipe and store the finished dish in the refrigerator for up to 4 days. Reheat gently before serving.

Serving ideas

Serve this Mandarin Honey Soy Chicken over steamed basmati rice, with the sticky sauce spooned generously over the top. The rice soaks up the delicious sauce and balances the richness of the chicken. For a complete meal, add a side of steamed broccoli or a simple green salad.

This dish also works well in lettuce cups for a lighter option, or as a filling for tacos or sliders. The sweet-savory flavor pairs well with pickled vegetables or a crunchy slaw. Leftovers can be used in wraps or over noodles for a quick lunch the next day.

Frequently asked questions

Can this recipe be made with chicken breasts instead of thighs?
Yes, but chicken breasts cook faster and can dry out. Use bone-in, skin-on breasts and reduce the cooking time to 3-4 hours on LOW. Check for doneness at 165°F (74°C) and remove from the slow cooker as soon as they are cooked through. Shred and return to the sauce.
Can this dish be frozen?
Absolutely. Let the cooked dish cool completely, then transfer to a freezer-safe container. Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. The sauce may separate slightly upon reheating; stir well.
What can be used instead of mandarin oranges?
Canned peaches, pineapple chunks, or fresh orange segments all work well. If using fresh oranges, make sure to remove all the white pith, as it can be bitter. Adjust the sweetness if needed, as some fruits are more tart than others.
How can the sauce be thickened?
If the sauce is too thin after cooking, remove the chicken and set aside. Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to make a slurry, then stir it into the sauce. Cook on HIGH for 5-10 minutes until thickened. Alternatively, simmer the sauce in a skillet over medium heat to reduce.
Is this recipe gluten-free?
It can be. Traditional soy sauce contains wheat, so use tamari or coconut aminos for a gluten-free version. Double-check that all other ingredients are certified gluten-free. The rest of the ingredients are naturally gluten-free.

Mandarin Honey Soy Chicken Thighs: 6-Ingredient Crockpot Dinner

Mandarin honey soy chicken thighs in a slow cooker, glistening with sticky sauce

Ingredients

  • 6 boneless skinless chicken thighs
  • 2 cups mandarin orange segments
  • 1 tbsp freshly grated ginger
  • 1/4 cup honey
  • 1/4 cup soy sauce

Instructions

  1. Place the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Scatter the mandarin orange segments and grated ginger evenly over the chicken. In a small bowl or spouted measuring cup, stir together the honey and soy sauce until combined. Pour the honey-soy mixture over the chicken and oranges, making sure to coat the chicken as much as possible.
  2. Cover the slow cooker with the lid. Cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C). The chicken should be easily shredded with a fork.
  3. Once the chicken is cooked through, remove it from the slow cooker to a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir gently to coat with the sauce.
  4. If the sauce seems thin, leave the slow cooker on HIGH with the lid off for 15-20 minutes, stirring occasionally, until it reduces and thickens slightly. The sauce should coat the back of a spoon.
  5. Spoon steamed basmati rice onto plates. Top with the shredded chicken and a generous amount of the sticky sauce and mandarin oranges. Serve hot.
