Before you start

Before starting, measure all ingredients and have them ready. Pat the chicken drumsticks dry with paper towels (no need to rinse—just dry). Grate the ginger using a microplane or fine grater. If using canned mandarin oranges, drain them well.

Cook the basmati rice according to package directions, or use leftover rice. Set out the slow cooker and a small bowl for the sauce. The prep is minimal, but having everything measured and within reach makes the dump-and-go process even quicker.

Ingredients at a glance (6)
  • 8 chicken drumsticks
  • 2 cups mandarin orange segments
  • 2 tbsp freshly grated ginger
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 2 cups cooked basmati rice, for serving

Instructions

Build the Base

  1. Arrange the Chicken
Place the chicken drumsticks in the slow cooker insert, arranging them in a single layer on the bottom. If possible, position them in a circle so they cook evenly. No need to brown or season first.
Look for The drumsticks should fit snugly without overlapping too much.
Tip For even cooking, choose drumsticks of similar size.
  2. Add the Citrus and Ginger
Scatter the mandarin orange segments over the chicken. Sprinkle the freshly grated ginger evenly across the top, making sure to cover the chicken pieces.
Look for The oranges and ginger should be distributed evenly over the chicken.
Tip Grate ginger on a microplane for a finer texture that blends into the sauce.

At the end of this phase, the drumsticks are arranged in the slow cooker, topped with mandarin oranges and ginger. The raw chicken looks pink and the oranges are bright. The ginger adds a fresh, pungent aroma. This is the starting point for the flavor layers.

Simmer and Glaze

  1. Pour Over the Sauce
In a small bowl or spouted cup, stir together the honey and soy sauce. Pour the mixture evenly over the chicken and oranges. Do not stir—the sauce will combine as it cooks.
Look for The honey-soy mixture should coat the chicken and oranges.
Tip Use a liquid measuring cup with a spout for a clean pour.
  2. Cover and Cook
Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours. The chicken is done when it is fork-tender and reaches an internal temperature of 165°F (74°C) in the thickest part, away from the bone.
Look for The sauce will be bubbling and the chicken will look glossy and glazed.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid during cooking—each peek adds 20 minutes of cook time.

After several hours, the slow cooker is bubbling gently. The sauce has turned a deep amber, and the chicken is glazed and tender. The kitchen smells sweet and savory with notes of citrus and soy. The chicken should be easily pierced with a fork, and the sauce should coat the spoon.

Finish and Serve

  1. Rest and Thicken the Sauce
Turn off the slow cooker. Transfer the chicken to a serving platter and cover loosely with foil. Let the sauce rest for 5 minutes, then skim off any excess fat from the surface. If the sauce is too thin, transfer it to a small saucepan and simmer over medium heat for 5-7 minutes until thickened.
Look for The sauce should coat the back of a spoon.
Tip Use a wide spoon to skim fat easily.
  2. Serve Over Rice
Spoon the cooked basmati rice onto plates. Place the chicken drumsticks on top and spoon the thickened sauce and mandarin oranges over the chicken. Serve hot.
Look for The rice should be fluffy and the chicken glistening with sauce.
Tip For a family-style meal, serve directly from the slow cooker.

The chicken is plated over rice, with the thickened sauce spooned over the top. The drumsticks are glossy and falling off the bone. The mandarin oranges are soft and caramelized. The dish looks inviting and smells rich and aromatic. Serve immediately with extra sauce on the side.

Common mistakes

One common mistake is lifting the lid to check on the chicken, which releases heat and extends cooking time. Trust the process and keep the lid on. Another mistake is using frozen chicken directly in the slow cooker—always thaw first for food safety and even cooking.

Avoid overcooking, as the meat can become mushy if left too long. Also, do not skip the resting step after cooking; letting the chicken rest allows the juices to redistribute, keeping the meat moist. If the sauce is too salty, balance it with a little extra honey or a squeeze of fresh orange juice.

How to tell it’s done

The chicken is done when it is fork-tender and the internal temperature reaches 165°F (74°C) in the thickest part, away from the bone.

To test, insert an instant-read thermometer into the thickest area of a drumstick without touching bone. The meat should be easily pierced with a fork and the juices should run clear.

The sauce will be bubbling and slightly thickened, with a rich amber color. If the sauce seems too thin, remove the chicken and simmer the sauce on the stovetop to reduce. The drumsticks should be glossy and glazed, with the mandarin oranges soft and infused with the sauce.

  • Poultry: 165°F (74°C) in the thickest part
