Before you start

Before starting, cut the chicken into bite-sized cubes and pat them dry with paper towels. Drain the mandarin oranges thoroughly to remove excess liquid, which helps the sauce stay thick. Grate the fresh ginger using a fine grater or microplane.

Have the BBQ sauce measured and ready. No need to preheat the slow cooker; just add the ingredients in the order listed. If you plan to serve with rice, start that just before the chicken is done, or use a rice cooker.

Ingredients at a glance (5)
  • 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
  • 15 oz canned mandarin orange segments, drained
  • 1 tbsp fresh ginger, grated
  • 1 1/2 cups hickory brown-sugar BBQ sauce
  • Steamed jasmine rice, for serving

Instructions

Layer and Cover

  1. Layer the Ingredients
Place the cubed chicken breasts in the bottom of the slow cooker in an even layer. Sprinkle the grated ginger over the chicken, then scatter the drained mandarin orange segments on top. Pour the hickory BBQ sauce evenly over everything, making sure the chicken is well coated.
Look for The chicken pieces are nestled under the oranges and sauce, with the sauce coating the top layer.
Tip No need to stir; the slow cooker will blend the flavors as it cooks.

At the end of this phase, the slow cooker contains raw chicken cubes, drained mandarin segments, grated ginger, and BBQ sauce layered in that order.

The sauce should cover most of the chicken, with some orange pieces visible. The aroma is sweet and smoky from the sauce. You should see no dry chicken pieces; if any are exposed, spoon a little sauce over them.

Simmer and Tenderize

  1. Slow Cook Until Tender
Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is cooked through and tender. The sauce should be bubbling gently around the edges. Stir gently once halfway through, if possible, to redistribute the sauce.
Look for The chicken is fork-tender and the sauce has thickened slightly, clinging to the meat.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip For the most tender result, use the low setting. Avoid lifting the lid too often.

After 4-5 hours on low, the chicken is cooked through and tender. The sauce is bubbling gently, and the kitchen smells of hickory smoke and citrus. The chicken pieces are coated in a glossy, deep brown glaze. The mandarin segments have softened but remain intact. Use a thermometer to confirm the chicken reaches 165°F (74°C) before serving.

Plate and Serve

  1. Serve Over Rice
Spoon the hot chicken and sauce over steamed jasmine rice. Garnish with extra mandarin segments if desired (optional). Serve immediately.
Look for The chicken is glistening with sauce, and the mandarin pieces are soft but intact.
Tip For a pretty presentation, place the rice in a bowl, top with the chicken, and drizzle with extra sauce.

The chicken is piled over steamed jasmine rice, with extra sauce spooned on top. The glaze is thick and sticky, and the mandarin pieces add bright orange pops. The dish looks inviting and smells sweet, smoky, and savory. Serve immediately while hot, with additional sauce on the side if desired.

Common mistakes

One common mistake is lifting the slow cooker lid too often, which releases heat and extends cooking time. Another is using chicken that is not cut into uniform cubes, leading to uneven cooking.

Overcrowding the slow cooker can also cause the chicken to steam instead of braise; make sure the pieces are in a single layer as much as possible. Finally, adding too much liquid (like extra broth) can make the sauce too thin, so stick to the recipe amounts.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) on an instant-read thermometer. The meat should be fork-tender and easily pull apart. The sauce should be bubbling and slightly thickened, clinging to the chicken and oranges.

If the sauce seems thin, remove the chicken and reduce the sauce on the stovetop or cook uncovered for an additional 15-20 minutes. The mandarin segments should be soft but still hold their shape.

  • Poultry: 165°F (74°C) in the thickest part
