Tips for success
For an extra layer of texture and flavor, try searing the sliced smoked sausage in a skillet over medium-high heat for a few minutes before adding them to the casserole.
This extra step browns the sausage edges and renders some of the fat, which can then be drizzled over the potatoes for a deeper smoky taste. If you prefer a lighter dish, you can substitute half-and-half for the heavy cream, though the resulting sauce will be slightly thinner and less velvety.
If you find that your cheese is melted but not as browned as you would like at the end of the baking time, turn on the oven broiler for the last 2 to 3 minutes of cooking.
Keep a very close eye on the casserole during this time, as the high heat of the broiler can quickly turn perfectly golden cheese into burnt spots. Let the dish rest for at least ten minutes before slicing to ensure clean, scoopable portions.
Variations
- Spicy Jalapeno: Add diced fresh jalapeños to the potato mixture and use Pepper Jack cheese instead of cheddar for a spicy kick.
- Bacon Lover's: Stir in crispy crumbled bacon along with the smoked sausage for an extra layer of smoky, salty crunch.
- Broccoli Cheddar: Mix in small raw broccoli florets with the potatoes before baking to add color and a serving of vegetables.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended as the cream sauce may separate and the potatoes can become mealy upon thawing.
- Reheat
- Reheat individual portions in the microwave, or cover the baking dish with foil and heat in a 350°F (175°C) oven for 15-20 minutes until hot.
Allow any leftover potato bake to cool completely at room temperature for no more than two hours before storing. Transfer the leftovers to an airtight container, or cover the baking dish tightly with plastic wrap or aluminum foil. Store the casserole in the refrigerator, where it will remain fresh and delicious for up to three to four days, making it an excellent option for easy weekday lunches or dinners.
This casserole can easily be assembled up to 24 hours in advance. Combine the potatoes, cream, ranch seasoning, sausage, and cheese in the baking dish as directed, then cover tightly and store in the refrigerator. When ready to bake, let the dish sit on the counter for about 30 minutes to take the chill off before placing it in the oven, adding about 5 to 10 minutes to the covered baking time.
Serving ideas
Serve this rich and comforting potato bake as a complete, satisfying main course alongside a crisp, green garden salad dressed with a light vinaigrette. The bright acidity of the salad dressing cuts through the richness of the cream and cheese beautifully, balancing the entire meal.
Steamed green beans, roasted broccoli, or a simple coleslaw also make fantastic side dishes that complement the smoky and savory flavors of the sausage and ranch.
For a casual gathering or game day buffet, serve this casserole straight from the baking dish with a variety of optional toppings on the side.
Guests can customize their plates with sliced green onions, a dollop of sour cream, pickled jalapeños for a kick of heat, or even extra crispy crumbled bacon. It pairs wonderfully with crusty garlic bread to soak up any of the delicious ranch-infused cream sauce left on the plate.

- 2 tbsp dry ranch seasoning mix
- 2 cups shredded cheddar cheese, divided
