Tips for success
To achieve the ultimate fluffy texture inside your potato, use a fork to poke a line of holes across the top right after baking, then gently squeeze the ends of the potato toward the center to pop it open.
Use a fork to fluff up the steaming interior flesh before adding any toppings, which creates pockets for the melted cheese and cream sauce to settle into.
For an even richer flavor profile, you can brush the potato skins with a light coating of olive oil and a sprinkle of kosher salt before baking. This not only helps the skin crisp up beautifully but also makes the skin delicious enough to eat, adding a wonderful texture contrast to the creamy seafood filling.
Variations
- Spicy Jalapeno Kick: Add finely diced fresh jalapenos to the skillet along with the Cajun seasoning for an extra layer of heat in the cream sauce.
- Three-Cheese Blend: Substitute the cheddar cheese with a blend of Monterey Jack, mozzarella, and Gouda for an ultra-gooey, complex melted cheese layer.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in separate airtight containers for up to 2 days; cool completely within 2 hours of cooking.
- Freezer
- Freezing is not recommended as the cream sauce may separate and the shrimp can become rubbery upon thawing.
- Reheat
- Reheat the potato in the oven at 350°F (177°C); gently warm the seafood sauce in a skillet over low heat, adding a splash of milk if needed.
Store any leftover Cajun seafood cream sauce and shrimp in an airtight container in the refrigerator for up to two days. Keep the baked potatoes stored separately in a wrap or container.
Because seafood and cream sauces do not freeze well, it is highly recommended to enjoy this dish fresh rather than freezing it for long-term storage.
You can easily prep several components of this dish ahead of time to save cooking minutes. Wash and dry the potatoes, chop the green onions, and crumble the bacon a day in advance.
You can also bake the potatoes ahead of time and reheat them in the oven at 350°F (177°C) for about fifteen minutes until hot before assembling the final dish.
Serving ideas
Serve these loaded potatoes immediately while hot, presenting them on wide, shallow bowls to catch any delicious Cajun cream sauce that spills over the sides. Pair this rich, decadent main course with a fresh green side salad tossed in a light vinaigrette to balance the creamy, spicy flavors of the seafood topping.
A side of steamed green vegetables, such as asparagus spears or roasted broccoli, also complements the dish beautifully.
Pair this meal with a chilled glass of dry white wine, like a Sauvignon Blanc or Pinot Grigio, which cuts through the richness of the cream sauce and highlights the sweet flavor of the jumbo shrimp.

Loaded Cajun Seafood Baked Potato with Jumbo Shrimp

Ingredients
- 4 large russet potatoes, scrubbed and dried
- 1 lb jumbo shrimp, peeled and deveined
- 1 tbsp Cajun seasoning, divided
- 4 tbsp unsalted butter, divided
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits, crispy
- 1/4 cup chopped green onions
- 1/2 tsp smoked paprika, for dusting
Instructions
- Preheat the oven to 400°F (204°C). Pierce the scrubbed potatoes with a fork several times. Place them directly on the middle oven rack and bake for 50 to 60 minutes.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the seasoned jumbo shrimp and sear for 2 to 3 minutes per side until they turn pink and reach a safe internal temperature of 145°F (63°C). Remove the cooked shrimp from the skillet and set aside.
- Reduce the heat to medium-low. In the same skillet with the pan drippings, melt the remaining 2 tablespoons of butter. Pour in the heavy cream and add the remaining Cajun seasoning. Simmer gently for 3 to 5 minutes, stirring constantly, until the sauce thickens slightly.
- Cut a slit down the center of each hot baked potato and gently squeeze the ends to open them. Use a fork to fluff up the inside flesh. Sprinkle the shredded cheddar cheese and crispy bacon bits inside the warm potatoes, allowing the cheese to melt.
- Spoon the warm Cajun cream sauce and cooked jumbo shrimp generously over the top of each loaded potato. Garnish with chopped green onions and a light dusting of paprika before serving immediately.
