Tips for success
For the best texture, use whole milk in the cheese sauce—it creates a richer, creamier result than lower-fat milk. If you only have 2% or skim milk, you can add a tablespoon of butter to compensate.
When stirring the sauce, use a whisk to prevent lumps, and keep the heat moderate to avoid scorching the bottom of the pan.
To make the panko topping extra crispy, toss the breadcrumbs with melted butter until they are evenly coated before sprinkling over the dish.
You can also add a pinch of paprika or garlic powder to the breadcrumbs for extra flavor. If you prefer a softer topping, reduce the baking time by a few minutes and cover the skillet with foil for part of the baking.
Variations
- Chicken Buffalo Mac: Add 2 cups of shredded rotisserie chicken to the pasta mixture before baking for a heartier version. The chicken adds protein and makes the dish more filling.
- Veggie Loaded: Stir in sautéed mushrooms, bell peppers, or spinach along with the cauliflower for extra vegetables. This adds color and nutrients without changing the cooking time.
- Smoky Bacon: Crumble 6 slices of cooked bacon over the top before adding the panko. The smoky flavor pairs well with the buffalo sauce and adds a salty crunch.
- Extra Spicy: Increase the amount of hot sauce to 1/2 cup and add a pinch of cayenne pepper to the cheese sauce. Top with sliced jalapeños before baking for an extra kick.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of milk to restore creaminess.
- Freezer
- Freeze the unbaked skillet (without panko) for up to 2 months. Thaw overnight and bake as directed, adding 10–15 minutes.
- Reheat
- Reheat individual portions in the microwave for 1–2 minutes or in a 350°F (175°C) oven for 10–15 minutes until hot.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, so you may want to add a splash of milk when reheating to restore a creamy texture.
Reheat individual portions in the microwave or in a 350°F (175°C) oven until warmed through.
You can assemble the entire dish (without the panko topping) up to a day ahead. Cover and refrigerate, then add the buttered panko just before baking. You may need to add 5–10 minutes to the baking time if the dish is cold from the refrigerator.
Serving ideas
Serve this buffalo cauliflower mac and cheese as a main dish with a simple green salad or roasted vegetables on the side. It also pairs well with grilled chicken or steak for a heartier meal. The skillet presentation makes it perfect for sharing at the table.
For a fun twist, serve individual portions in small ramekins or mini skillets. Garnish with extra blue cheese crumbles and a drizzle of hot sauce for those who like it spicier.
This dish is also great for potlucks and game-day spreads, as it stays warm for a while when served in the cast-iron skillet.

Ingredients
- 12 oz cavatappi or elbow macaroni
- 1 small head cauliflower, cut into bite-sized florets
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 tbsp butter
- 2 tbsp all-purpose flour
- 1 2/3 cups whole milk
- 1/3 cup buffalo-style hot sauce
- 1 1/2 cups sharp cheddar cheese, shredded
- 1 cup pepper jack cheese, shredded
- 1/2 cup panko breadcrumbs
- 2 tbsp butter, melted
- 2 green onions, sliced
- 1/2 cup blue cheese crumbles
Instructions
- Heat the oven to 400°F (200°C). Toss the cauliflower florets with olive oil, salt, and black pepper on a baking sheet. Spread in a single layer. Roast for 15 minutes, until tender and caramelized at the edges. Remove from the oven and set aside.
- Bring a large pot of salted water to a boil. Add the cavatappi and cook according to package directions until al dente, about 8 minutes. Drain well and set aside.
- In a large skillet or saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Slowly whisk in the milk and hot sauce. Continue whisking until the mixture thickens and bubbles, about 3 minutes. Remove from heat and stir in the shredded cheddar and pepper jack until melted and smooth.
- Add the cooked cavatappi and roasted cauliflower to the cheese sauce. Stir gently until everything is well coated.
- Transfer the mixture to a 10-inch cast-iron skillet and spread it into an even layer.
- In a small bowl, mix the panko with the melted butter. Sprinkle the buttered panko evenly over the mac and cheese. Bake at 400°F (200°C) for 15 minutes, until the top is golden and the sauce is bubbling at the edges.
- Remove the skillet from the oven and let it cool for a few minutes. Sprinkle with sliced green onions and blue cheese crumbles before serving.
