Before you start

Before beginning, ensure the oven is preheated to 375°F (190°C) to allow for an even bake. Have the shredded cheese and cooked bacon ready to go.

If the hash brown potatoes are frozen, consider letting them thaw slightly in the refrigerator beforehand, or patting them dry if they are very icy, to avoid excess liquid in the bottom of the pan.

Ingredients at a glance (5)
  • 4 cups diced hash brown potatoes
  • 8 large eggs, beaten
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup cooked bacon pieces

Instructions

Layering the base

  1. Prepare the base
Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish lightly. Spread the diced hash brown potatoes evenly across the bottom of the dish to create a solid base.
Look for Potatoes should form a flat, even layer covering the bottom of the dish.
Tip Ensure the potatoes are thawed if using frozen ones to reduce excess moisture.

The potatoes should be spread in an even, flat layer across the bottom of the dish. This ensures every bite has an equal ratio of potato to egg. Check that the potatoes are not piled too high in the center, which could prevent the egg mixture from reaching the bottom.

Mixing the custard

  1. Mix and pour
In a large bowl, whisk together the eggs and sour cream until the mixture is smooth and pale yellow. Pour the egg mixture evenly over the potatoes in the baking dish.
Look for The liquid should fill the gaps between the potatoes without overflowing.
Tip Whisk thoroughly to ensure the sour cream is fully incorporated into the eggs.

The egg and sour cream mixture should be completely uniform in color and texture. There should be no visible lumps of sour cream.

When poured over the potatoes, the mixture should distribute evenly, filling the spaces between the potato cubes to create a stable, custard-like foundation.

Final bake

  1. Top and bake
Sprinkle the shredded cheddar cheese and cooked bacon pieces evenly over the top. Bake for 30 to 35 minutes until the eggs are set and the top is golden. Ensure the center reaches 160°F (71°C) to be fully cooked. Let rest for 5 minutes before serving.
Look for The edges should be bubbling and the cheese should be melted and golden.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Cover loosely with foil if the cheese browns too quickly before the eggs set.

The casserole is finished when the cheese has melted into a golden, bubbly layer and the egg mixture is firm to the touch. The edges should be slightly browned and pulling away from the sides of the pan. Let it rest briefly to allow the structure to firm up for easier slicing.

Common mistakes

A common mistake is failing to beat the eggs and sour cream enough, which can lead to streaks of white. Another issue is using too high an oven temperature, which can brown the cheese before the eggs have set in the middle.

Always check that the bacon is fully cooked before adding it, as it will only warm through during the baking process rather than crisp up.

How to tell it’s done

The casserole is done when the top is golden brown, the cheese is bubbling, and the center is fully set. A knife inserted into the middle should come out clean.

Using a meat thermometer is the best way to confirm the eggs have reached 160°F (71°C), ensuring the casserole is safe and ready to slice into firm, neat squares.
