Tips for success
For the best texture, use freshly shredded cheese—it melts more smoothly than pre-shredded varieties. If you like extra heat, add a pinch of cayenne to the dip base.
To make the crostini, brush baguette slices with olive oil and toast at 400°F (200°C) for 5–7 minutes until golden. They can be made ahead and stored in a sealed container.
If you don't have a cast-iron skillet, use a 9-inch pie dish or a small baking dish. The dip can also be assembled ahead and refrigerated, but add the panko topping just before baking to keep it crunchy.
For a richer flavor, substitute half the sour cream with mayonnaise, but note that it will change the taste slightly.
Variations
- Spicy Chorizo Version: Swap the bacon for cooked fresh chorizo, and use pepper jack cheese instead of Monterey Jack. Add a diced chipotle pepper in adobo for extra smokiness and heat. The chorizo adds a savory, spicy depth that pairs beautifully with the creamy base.
- Vegetarian Roasted Jalapeño: Omit the bacon and roast the jalapeños before dicing to add a smoky, mellow flavor. Add a can of drained black beans for extra heartiness. The roasted jalapeños bring a deeper, slightly sweet heat that works well with the creamy cheeses.
- Cheddar Bacon Ranch: Add 1 tablespoon of ranch seasoning mix to the dip base along with the other ingredients. Substitute half the sharp cheddar with smoked cheddar for a richer flavor. The ranch seasoning adds a herby, tangy note that complements the bacon and cheese.
- Crispy Onion Topping: Replace the panko topping with crushed French-fried onions mixed with melted butter. The onions bake into an extra-crispy, savory crust. This variation adds a salty, crunchy element that pairs well with the creamy dip.
Storage and make-ahead
- Fridge
- Store leftover dip in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
- Freezer
- Freeze the unbaked dip (without the panko topping) for up to 2 months. Thaw overnight in the refrigerator, add the topping, and bake as directed.
- Reheat
- Reheat leftover dip in a 350°F (175°C) oven for 10–15 minutes, or microwave individual portions for 1–2 minutes until hot.
Store leftover dip in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster oven to restore the crunchy topping.
The dip can also be reheated in the microwave, but the panko will soften. For best results, reheat in a 350°F (175°C) oven for 10–15 minutes until hot and bubbling.
The dip base can be assembled up to 2 days ahead and stored in the refrigerator. When ready to bake, sprinkle the panko topping over the top and bake as directed, adding 5–10 minutes to the baking time since the dip is cold. The crostini can also be made a day ahead and kept in an airtight container.
Serving ideas
Serve this dip warm, straight from the skillet, with golden crostini for scooping. The crunchy panko topping and bubbly cheese are best enjoyed fresh from the oven.
For a party, set the skillet on a trivet with extra crostini on the side. The dip is also delicious with tortilla chips, fresh vegetables, or even spooned over grilled chicken.
Garnish with extra bacon bits and fresh jalapeño rounds just before serving to add a pop of color and a fresh, crunchy finish. The dip is rich and satisfying, so a little goes a long way. It pairs well with cold beers, margaritas, or a crisp white wine. For a more casual presentation, serve it in a bread bowl.

Loaded Bacon Cheddar Jalapeño Popper Dip with Golden Crostini

Ingredients
- 8 oz cream cheese, softened
- 2/3 cup sour cream
- 2 cups sharp cheddar cheese, shredded (about 8 oz)
- 1 cup Monterey Jack cheese, shredded (about 4 oz)
- 4 fresh jalapeños, finely diced (seeds and membranes removed for less heat)
- 6 slices bacon, cooked and crumbled (about 1/2 cup)
- 2 cloves garlic, minced
- 1/2 cup panko breadcrumbs
- 1 tbsp butter, melted
- 1 baguette, sliced and toasted
Instructions
- In a medium bowl, beat the softened cream cheese and sour cream together with an electric mixer or a wooden spoon until completely smooth and creamy. Add the minced garlic, finely diced jalapeños, crumbled bacon, and about three-quarters of the shredded cheddar and Monterey Jack. Stir everything until well combined.
- Transfer the mixture to an 8-inch cast-iron skillet or a similar oven-safe skillet, smoothing the top with a spatula. Sprinkle the remaining shredded cheddar and Monterey Jack evenly over the surface. In a small bowl, toss the panko breadcrumbs with the melted butter until evenly coated, then scatter the buttered crumbs over the cheese layer.
- Preheat the oven to 400°F (200°C). Bake the dip for 20 minutes, until the top is deeply golden brown and crunchy, and the cheese is vigorously bubbling around the edges. The dip should be hot all the way through, with the center reaching at least 160°F (71°C).
- Remove the dip from the oven and let it cool for a few minutes. Scatter fresh jalapeño rounds and extra bacon bits over the top for a bright, crunchy finish. Serve warm with toasted baguette slices for scooping.
