Before you start

Before you begin, gather all your ingredients and ensure your baking dish is clean and ready for use. Preheat your oven to 375°F (190°C) so it reaches the proper temperature before the dish goes inside.

If you are using pre-measured ingredients, keep them organized near your prep area to make the assembly process smooth and efficient, allowing you to get the dish into the oven in just a few minutes.

Ingredients at a glance (4)
  • 2 cups long-grain white rice
  • 6 boneless skinless chicken thighs
  • 3 cups lemon butter broth
  • 2 tbsp lemon pepper seasoning

Instructions

Assembling the base

  1. Prepare the baking dish
Distribute the long-grain white rice evenly across the bottom of a large rectangular ceramic baking dish. Arrange the boneless skinless chicken thighs directly on top of the rice in a single layer.
Look for Ensure the rice is spread into an even, flat layer across the bottom of the dish.
Tip Using a wide dish ensures that both the rice and the chicken cook at the same rate.

At this phase, the rice is evenly spread across the bottom of the dish, and the chicken thighs are arranged on top. Everything is ready for the liquid to be added. The preparation should feel orderly, with the chicken positioned to cook evenly alongside the rice grains. Check that the chicken is fully defrosted if you used frozen poultry to ensure safety and consistent cooking times.

Adding liquids and seasoning

  1. Add liquid and seasoning
Pour the lemon butter broth slowly over the chicken and rice, ensuring the rice is fully submerged. Sprinkle the lemon pepper seasoning evenly over the top of the chicken thighs.
Look for The liquid should cover the rice completely so it can absorb the flavors while baking.
Tip Pouring from a pitcher helps distribute the liquid evenly without disturbing the placement of the rice.

The lemon butter broth is poured over the ingredients, and the lemon pepper seasoning is distributed across the chicken. The liquid should reach the level of the rice but not drown the chicken completely.

You should see a uniform coating of seasoning on the chicken, which will help it develop a nice color and flavor as it bakes. Ensure the oven is fully preheated before moving to the next step.

Baking until golden

  1. Bake until finished
Place the dish in a preheated oven at 375°F (190°C). Bake for approximately 45 minutes, or until the liquid is absorbed and the chicken reaches an internal temperature of 165°F (74°C). Remove from the oven and let rest for 5 minutes before serving.
Look for The edges should be bubbling and golden, and the rice should be tender and fluffy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Checking the internal temperature ensures the poultry is cooked safely through.

At the end of this phase, the dish should be bubbling at the edges, and the chicken should appear golden and firm to the touch. The rice will have absorbed the liquid, becoming fluffy and aromatic.

Before taking it out, check the internal temperature of the chicken to ensure it has reached 165°F (74°C). The kitchen will smell strongly of lemon and savory butter, signaling that the meal is ready to serve.

Common mistakes

A common mistake is overcrowding the dish, which can prevent the rice from cooking evenly. Ensure the chicken thighs are spread out and not stacked on top of each other.

Another potential pitfall is using too little liquid; the rice needs enough broth to steam properly. If the dish looks dry before it finishes, a small splash of hot water or extra broth can help, but avoid adding too much at once.

How to tell it’s done

The dish is ready when the rice is tender and has absorbed almost all the liquid. The chicken should be lightly golden on top and reach a safe internal temperature of 165°F (74°C). If the chicken is cooked through but the rice still seems slightly firm, cover the dish with foil and let it rest for an additional few minutes; the residual heat will finish the process perfectly.
