Before you start

Before you begin, ensure your oven is preheated to 375°F (190°C) so the biscuits start rising immediately upon entering the heat. Have your 9x13 inch baking dish ready on a clean workspace.

Remove the biscuit dough from the refrigerator just before you are ready to cut it to keep it firm.

Wash and thoroughly dry the blueberries to prevent excess moisture from diluting the lemon cream. Have your serving spoon and cooling rack prepared for when the dish comes out of the oven.

Ingredients at a glance (3)
  • 2 cans refrigerated biscuit dough, cut into quarters
  • 1 1/2 cups sweet lemon cream
  • 1 cup fresh blueberries

Instructions

Preparation and assembly

  1. Prepare the baking dish
Preheat your oven to 375°F (190°C). Take the refrigerated biscuit dough and cut each biscuit into four equal pieces. Arrange the dough pieces evenly across the bottom of a 9x13 inch ceramic baking dish so they are distributed in a single layer.
Look for The dough pieces should cover the bottom of the dish without being overly crowded.
Tip Using a light-colored ceramic dish helps ensure even heating and prevents the edges from browning too quickly.

The biscuit pieces should be cut uniformly and arranged in the dish. Check that they are spread evenly to allow for consistent heat distribution. The blueberries should be scattered across the top, ready for the oven.

Baking to perfection

  1. Add cream and berries
Slowly pour the sweet lemon cream over the arranged biscuit pieces, ensuring that the liquid settles into the gaps between the dough. Scatter the fresh blueberries evenly over the top of the biscuits and cream mixture.
Look for Ensure the cream reaches the bottom of the dish to keep the biscuits moist during baking.
Tip Gently shake the dish side to side to help the cream distribute evenly among the dough pieces.

Monitor the oven through the glass to watch for the golden-brown color. The edges should show bubbling, aromatic lemon cream. Ensure the kitchen smells fragrant and the biscuits have risen significantly.

Final rest and serving

  1. Bake until golden
Place the dish into the preheated oven and bake for 25 minutes, or until the biscuits are golden brown and the lemon cream is bubbling around the edges. Remove from the oven and let it rest for 5 minutes before serving.
Look for The top should be a deep golden brown and the center should be set.
Tip If the biscuits brown too quickly, cover the dish loosely with aluminum foil for the final few minutes of baking.

The dish should look set and golden. After the resting period, the cream should have thickened into a luscious sauce. Check that the center is fully cooked and the berries are softened.

Common mistakes

Avoid over-crowding the dish with too many biscuit pieces, as this prevents the heat from circulating properly and leads to uneven cooking. Do not pour the lemon cream too aggressively, as it may splash over the sides of the baking dish.

Ensure the blueberries are distributed evenly; clumping them in one spot can create soggy patches. Finally, do not skip the resting period, as the sauce needs a few minutes to stabilize and achieve the perfect creamy texture for serving.

How to tell it’s done

The bake is done when the biscuits have puffed up and turned a deep, appetizing golden brown. The lemon cream should be visibly bubbling around the sides of the dish and throughout the gaps in the biscuits.

If you gently press the center of a biscuit piece with a fork, it should feel firm and bounce back rather than feeling doughy or raw. Allow the dish to rest for 5 minutes so the cream can thicken slightly before serving.
