Tips for success
For a more intense flavor, prepare the doenjang glaze a few hours in advance and allow the brisket to marinate in the refrigerator before placing it into the slow cooker.
This extra step allows the flavors to penetrate deeper into the fibers of the meat, resulting in a more pronounced savory profile that highlights the complexity of the fermented soybean paste.
When serving, consider the temperature of your accompaniments. The contrast between the hot, savory brisket and the cool, crisp perilla leaves creates a balanced dining experience.
If perilla leaves are difficult to source, fresh lettuce leaves can serve as a suitable, milder alternative for wrapping the beef, providing a similar satisfying crunch and freshness to the meal.
Variations
- Spicy Doenjang Brisket: Add two tablespoons of gochujang (Korean red chili paste) to the glaze mixture for a spicy kick that pairs perfectly with the savory doenjang and sweet honey.
- Root Vegetable Addition: Toss in chunks of daikon radish or carrots during the last two hours of cooking. These vegetables will absorb the savory glaze and add a pleasant, tender texture to the dish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe bag or container for up to 2 months. Thaw in the refrigerator overnight before reheating.
- Reheat
- Reheat gently in a saucepan over low heat until warmed through, adding a splash of water if the sauce has become too thick during storage.
Store any leftover brisket in an airtight container in the refrigerator for up to three days. Keep the remaining braising liquid with the meat to maintain its moisture and flavor, as the sauce will continue to act as a protective glaze during storage.
Ensure the container is sealed tightly to prevent the absorption of other odors from the refrigerator.
This dish is an excellent candidate for making ahead, as the flavors often improve after sitting for a day. Simply cook the brisket as directed, allow it to cool completely, and store it in the refrigerator. When ready to serve, gently reheat the meat in its sauce on the stovetop over low heat until warmed through, ensuring it does not overcook.
Serving ideas
Serve the sliced brisket over a generous portion of steamed short-grain rice to soak up the excess glaze. Arrange the perilla leaves on a small side plate, allowing guests to assemble their own wraps with a dab of ssamjang. The combination of the rich beef, the sweet rice, and the herbaceous perilla leaves creates a perfectly balanced bite.
For a complete meal, consider adding side dishes such as kimchi or pickled vegetables to provide a sharp, acidic contrast to the richness of the braised beef.
The variety of textures and temperatures, from the warm, tender brisket to the cold, crisp greens, makes for a sophisticated and satisfying presentation that is suitable for both casual family dinners and more formal gatherings.

Korean Doenjang Garlic Braised Brisket

Ingredients
- 3.5 lb beef brisket
- 75 g fermented soybean paste (doenjang)
- 15 whole peeled garlic cloves
- 60 ml mirin
- 45 ml honey
- 4 scallions, sliced
- steamed short-grain rice, for serving
- fresh perilla leaves, for serving
- ssamjang, for serving
Instructions
- Place the beef brisket into the ceramic slow cooker basin. In a small bowl, combine the fermented soybean paste, honey, and mirin to create a thick, savory glaze. Pour this mixture evenly over the beef, ensuring the entire surface is well coated. Scatter the whole peeled garlic cloves and sliced scallions around the meat within the slow cooker.
- Cover the slow cooker with its lid and set to the low heat setting. Allow the brisket to simmer undisturbed for 8 hours. During this long cooking period, the doenjang and mirin will reduce into a rich, amber-colored glaze that clings to the tender beef, while the garlic cloves soften completely and mellow in flavor. Ensure the meat reaches an internal temperature of 145°F (63°C) and let it rest for at least 3 minutes before slicing.
- Once the cooking time is complete, remove the brisket from the slow cooker and let it rest on a cutting board for at least 10 minutes to lock in the juices. Slice the meat against the grain into thin, juicy strips. Serve the brisket over a bed of warm short-grain rice, accompanied by fresh perilla leaves and a side of ssamjang for wrapping.
