Tips for success
To ensure the rice cooks evenly, spread it in a thin, even layer over the cabbage. If you use a thicker layer, you may need to add a little extra water and increase the baking time.
Also, be generous with the cheese—it creates a delicious crust that contrasts with the tender filling. For a crispier top, you can broil the casserole for the last 1-2 minutes, but watch it closely to avoid burning.
If you prefer a spicier dish, use a smoked sausage with a kick or add a pinch of red pepper flakes to the tomato soup mixture. You can also add a layer of sautéed onions or garlic before baking, but keep it simple to let the classic flavors shine.
This casserole is forgiving, so feel free to adjust the proportions of cabbage, rice, and sausage to suit your family's tastes.
Variations
- Spicy Cajun: Use andouille sausage instead of kielbasa and add 1 teaspoon of Cajun seasoning to the tomato soup mixture. Top with pepper jack cheese for extra heat.
- Cheesy Broccoli: Add 2 cups of broccoli florets to the cabbage layer. Use cheddar cheese instead of Swiss for a classic broccoli-cheese pairing.
- Italian Style: Swap the kielbasa for Italian sausage (cooked and sliced) and use a marinara sauce instead of tomato soup. Top with mozzarella and a sprinkle of Parmesan.
- Vegetarian Version: Omit the kielbasa and add 1 can of drained chickpeas for protein. Use vegetable broth to thin the tomato soup instead of water.

Leftover kielbasa cabbage rice bake can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place a portion in the microwave or in a covered dish in the oven at 350°F (175°C) until heated through.
The rice may absorb some liquid as it sits, so you can add a splash of water or broth when reheating to restore moisture.
You can assemble the casserole up to 24 hours in advance and keep it covered in the refrigerator. When ready to bake, add about 10-15 minutes to the covered baking time to account for the cold dish. This makes it a great option for busy weeknights or for prepping ahead for a gathering.
Serving ideas
Serve this kielbasa cabbage rice bake as a hearty main course with a side of crusty bread or a simple green salad. The rich, savory flavors pair well with a crisp white wine or a light beer. It's also delicious with a dollop of sour cream or a sprinkle of fresh herbs, like parsley or chives, for a touch of freshness.
This dish is a complete meal in itself, but you can also serve it as a side alongside roasted chicken or pork. For a lighter option, pair it with steamed vegetables or a cucumber salad.
The leftovers are just as tasty the next day, making it a great option for lunch or a quick dinner. Enjoy it warm, straight from the oven, for the best texture and flavor.

One-Pan Kielbasa Cabbage Rice Bake

Ingredients
- 4 cups chopped green cabbage
- 1 1/2 cups long-grain white rice
- 1 lb kielbasa, sliced into coins
- 1 can (10.5 oz) condensed tomato soup
- 1 cup water
- 2 cups shredded Swiss cheese
Instructions
- Heat the oven to 375°F (190°C). Spread the chopped cabbage evenly in the bottom of a large rectangular baking dish. Sprinkle the dry rice over the cabbage in an even layer. Arrange the kielbasa coins over the rice, distributing them evenly.
- In a small bowl, whisk the condensed tomato soup with 1 cup of water until smooth. Pour the mixture over the rice, cabbage, and kielbasa, making sure the liquid covers the rice evenly. Do not stir.
- Sprinkle the shredded Swiss cheese evenly over the top of the casserole, covering the kielbasa and rice completely.
- Cover the baking dish tightly with aluminum foil. Bake for 40 minutes, or until the rice is tender and has absorbed most of the liquid.
- Remove the foil and continue baking for 10-15 minutes, until the cheese is melted, golden, and bubbling at the edges.
- Remove the dish from the oven and let it rest for 5 minutes before serving. Scoop portions onto plates, making sure to get some kielbasa, cabbage, and rice in each serving.
