Tips for success

For the best texture, use black cocoa powder that is finely ground and not lumpy. Sift it with the flour to avoid streaks. If the dough seems too dry, add a teaspoon of milk; if too sticky, add a tablespoon of flour. The cream filling should be whipped until light and airy, then frozen solid; this prevents it from melting too quickly in the oven.

When placing the Oreo chunks on top, press them in gently so they don't sink into the dough. You can also reserve a few chunks to press on after baking for extra crunch.

Serve the cookies warm for the ultimate molten center, or at room temperature for a creamier texture. They are best eaten within a day, but can be reheated briefly in the microwave to restore the molten effect.

Variations

  • Mint Chocolate: Add 1/2 teaspoon peppermint extract to the cream filling and use mint-flavored chocolate sandwich cookies for the chunks. The cool mint pairs beautifully with the dark cocoa.
  • Peanut Butter Swirl: Mix 2 tablespoons of peanut butter into the cream filling before freezing. The peanut butter adds a savory note that contrasts with the sweet cream and dark chocolate.
  • Salted Caramel: Instead of the vanilla cream, use a thick salted caramel sauce that has been frozen into balls. The caramel will be gooey and molten, with a salty-sweet flavor.
  • Espresso Kick: Add 1 teaspoon of instant espresso powder to the dough along with the cocoa. The coffee enhances the chocolate flavor and adds a subtle bitterness that balances the sweetness.

Storage and make-ahead

Fridge
Store baked cookies in an airtight container in the refrigerator for up to 5 days. Let them come to room temperature or warm slightly before serving.
Freezer
Freeze unbaked, assembled cookies on a baking sheet, then transfer to a freezer bag for up to 2 months. Bake directly from frozen, adding 2-3 minutes.
Reheat
To reheat, place cookies on a baking sheet in a 300°F oven for 5 minutes, or microwave for 10-15 seconds to restore the molten center.

Store the cookies in an airtight container at room temperature for up to 3 days. They will soften slightly but remain delicious. To keep them crisp, place a piece of parchment paper between layers.

If you prefer a firmer center, refrigerate them, but bring to room temperature before serving. These cookies are best enjoyed within 2 days for the optimal texture contrast.

The dough can be made ahead and refrigerated for up to 3 days, or frozen for up to 2 months. The cream filling balls can also be frozen separately. To bake from frozen, add 1-2 minutes to the baking time.

Assemble the cookies completely and freeze them on a baking sheet, then transfer to a zip-top bag. Bake directly from frozen, adding 2-3 minutes to the oven time.

Serving ideas

Serve these cookies warm, straight from the oven, for the most dramatic molten center. The contrast between the crisp, crackly exterior and the flowing white cream is at its peak when the cookies are slightly warm. Pair them with a glass of cold milk or a scoop of vanilla ice cream to balance the richness.

At room temperature, the cream center becomes more like a thick frosting, still delicious but less runny. These cookies are perfect for dessert tables, birthday parties, or as a special weekend treat.

They also make impressive gifts when packed in a decorative box. For a more elegant presentation, dust with a little powdered sugar, though this is optional.

Frequently asked questions

Can the dough be made without black cocoa powder?
Yes, use Dutch-processed cocoa powder instead, but the color will be a dark brown rather than jet black. The flavor will also be slightly more bitter and less Oreo-like. You may need to add a bit more sugar to balance the bitterness.
Why did the cream filling leak out during baking?
Leakage usually happens if the dough is not sealed completely around the cream ball. Ensure the edges are pressed firmly and the dough is not too thin at the seams. Also, the cream must be frozen solid before wrapping; if it is too soft, it will melt and escape.
Can these cookies be made gluten-free?
Yes, substitute the all-purpose flour with a 1-to-1 gluten-free flour blend. Also use gluten-free chocolate sandwich cookies for the chunks. The dough may be slightly more fragile, so chill it longer and handle gently.
How should the cookies be stored to keep them fresh?
Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to 5 days or freeze baked cookies for up to 2 months. Reheat in the microwave or oven to restore the molten center.
Is it necessary to use an instant-read thermometer?
It is recommended to ensure the eggs are fully cooked. The internal temperature should reach 160°F (71°C). If you do not have a thermometer, the cookies are done when the tops are crackled and the edges are set, but the centers may still look slightly soft.

Jet-Black Stuffed Oreo Cookies with Vanilla Cream Center

Ingredients

  • 1/2 cup black cocoa powder
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 cup whipped Oreo vanilla cream filling
  • 12 Oreo cookies, broken into chunks

Instructions

  1. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2 minutes. Add the eggs one at a time, beating well after each addition. Sift in the black cocoa powder and all-purpose flour, then mix on low speed until a soft, pitch-black dough forms. The dough will be slightly sticky but should hold together when pressed.
  2. Scoop about 2 tablespoons of dough and flatten it into a disc in your palm. Place a frozen ball of whipped Oreo vanilla cream filling (about 1 tablespoon) in the center, then wrap the dough around it, sealing the edges completely. Roll gently into a ball. Repeat with the remaining dough and filling.
  3. Preheat the oven to 350°F (175°C). Place the stuffed dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart. Press broken Oreo cookie chunks into the surface of each ball. Bake for 10 minutes until the cookies are puffed and the tops have crackled. The centers will still look slightly soft but will set as they cool.
