Tips for success
For the best texture, cut the chicken into consistent 1-inch cubes so they cook evenly. If you prefer a thicker sauce, remove the chicken and vegetables with a slotted spoon, then simmer the remaining liquid on the stovetop until reduced by half.
You can also add a cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon water) to speed up thickening.
Make it a complete meal by serving over steamed jasmine or basmati rice, and garnish with fresh cilantro and lime wedges for extra brightness. The dish also works well in lettuce wraps or as a filling for tacos. If you like extra heat, add a pinch of red pepper flakes or a diced serrano pepper along with the jalapeños.
Variations
- Spicy Mango Version: Substitute mango chunks for the pineapple and add 1 tablespoon sriracha to the sauce. The mango adds a tropical sweetness that pairs beautifully with the jalapeño heat and honey soy glaze.
- Garlic-Ginger Twist: Add 1 tablespoon grated fresh ginger along with the garlic. The ginger brightens the sauce and adds a warm, aromatic note that complements the soy and honey.
- Pineapple-Bell Pepper: Replace half the jalapeños with sliced red or orange bell pepper. This reduces heat while adding sweetness and crunch, making it more family-friendly.
- Coconut-Lime Finish: Stir in 1/2 cup coconut milk during the last 30 minutes of cooking, and finish with extra lime juice. This creates a creamy, tropical sauce that’s even richer.

Jalapeño Lime Honey Soy Chicken Bites: Easy Crockpot Dinner

Ingredients
- 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 1 cup pineapple tidbits, drained
- 1/2 cup fresh jalapeño rings (seeded if desired)
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 2 tbsp fresh lime juice
- 3 cloves garlic, minced
Instructions
- Place the cubed chicken breasts in the bottom of a 6-quart slow cooker. Scatter the pineapple tidbits and jalapeño rings over the chicken. In a small bowl, whisk together the honey, soy sauce, lime juice, and minced garlic. Pour the sauce evenly over the chicken and fruit.
- Cover the slow cooker and cook on low for 4 hours, or on high for 2 hours, until the chicken is cooked through and tender. Stir gently halfway through cooking, if possible, to redistribute the sauce.
- Once the chicken reaches 165°F (74°C) on an instant-read thermometer, transfer the chicken, pineapple, and jalapeños to a serving plate using a slotted spoon. If desired, simmer the remaining sauce in a small saucepan over medium heat for 5 minutes to thicken slightly, then drizzle over the chicken. Serve warm over steamed rice.
