Tips for success
For the best flavor, use a BBQ glaze that has a smoky or bourbon note. If you only have regular BBQ sauce, add a tablespoon of bourbon or a teaspoon of smoked paprika to mimic that depth. Let the chicken rest for a few minutes after cooking before serving—this helps the juices redistribute and makes the meat even more tender.
To thicken the sauce further, remove the chicken from the slow cooker and whisk a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water into the sauce.
Simmer on the stovetop until it reaches your desired consistency. This is especially helpful if you prefer a very sticky glaze. You can also broil the cooked drumsticks for a few minutes to caramelize the surface even more.
Variations
- Spicy Mango Chicken: Swap the pineapple tidbits for mango chunks and use a mango habanero BBQ glaze. Add an extra jalapeño for more heat. The mango breaks down into a sweet, silky sauce that’s incredible with the spicy kick.
- Honey Garlic Drumsticks: Replace the bourbon BBQ glaze with a honey garlic sauce (equal parts honey, soy sauce, and minced garlic). Omit the brown sugar and lime juice. The result is a savory-sweet glaze with an Asian twist.
- Peach Bourbon Chicken: Use peach slices instead of pineapple, and a peach bourbon BBQ sauce. Reduce the brown sugar to 2 tablespoons since peaches are sweeter. The softer texture of peaches melds beautifully into the sauce.
- Chipotle Lime Drumsticks: Add 2 chipotle peppers in adobo sauce, minced, to the glaze, and increase the lime juice to 3 tablespoons. The smoky heat of chipotle pairs perfectly with the sweet pineapple and bourbon.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water if the sauce has thickened too much.
- Freezer
- Freeze cooked drumsticks in a freezer-safe container with sauce for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 15-20 minutes, or in the microwave in 1-minute intervals until hot.
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the sauce will thicken as it cools.
Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if the sauce is too thick. The chicken is also delicious cold, shredded into salads or sandwiches.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
If you do this, add a few minutes to the cooking time to account for the cold start. Alternatively, cook the chicken fully, then store in the refrigerator and reheat gently before serving.
Serving ideas
Serve these drumsticks over creamy garlic mashed potatoes to soak up the extra sauce. The sweet-heat glaze also pairs well with rice, polenta, or crusty bread for dipping.
A simple green salad with a tangy vinaigrette helps cut the richness. Garnish with chopped cilantro and extra lime wedges if you like, though the video keeps it simple.
For a casual meal, pile the drumsticks on a platter with the pineapple-jalapeño relish spooned on top. Let everyone grab their own. This dish is also great for a party—it’s easy to eat with your hands and the sauce is a crowd-pleaser. Provide plenty of napkins and maybe some wet wipes, because the glaze is sticky in the best way.

Jalapeño Lime Bourbon Glazed Chicken Drumsticks

Ingredients
- 8 chicken drumsticks
- 1 cup pineapple tidbits, drained
- 1/2 cup sliced jalapeños (from a jar)
- 1/2 cup bourbon BBQ glaze
- 1/4 cup packed dark brown sugar
- 2 tbsp fresh lime juice
- creamy garlic mashed potatoes, for serving
Instructions
- Place the chicken drumsticks in the slow cooker in a single layer, arranging them in a circle if possible. Scatter the drained pineapple tidbits and sliced jalapeños over the chicken. Pour the bourbon BBQ glaze evenly over everything, then sprinkle with the brown sugar and drizzle with lime juice. Do not stir.
- Cover the slow cooker and cook on LOW for 5 to 6 hours, or on HIGH for 2 1/2 to 3 hours, until the chicken is tender and cooked through. When the chicken reaches an internal temperature of 165°F (74°C), it is safe to eat. The meat should be pulling away from the bone easily.
- Using tongs, carefully transfer the drumsticks to a serving platter. Spoon some of the sauce from the slow cooker over the top. Serve hot over creamy garlic mashed potatoes, spooning extra sauce and pineapple-jalapeño mixture over each portion.
