Before you start

Before you begin, gather all your ingredients and ensure your oven is fully preheated to 375°F (190°C). Have your baking dish ready on a stable surface.

If using fresh jalapenos, wear gloves while dicing to avoid skin irritation and wash your hands immediately afterward. Ensure your broth is at room temperature to help it blend easily with the beaten eggs before pouring.

Ingredients at a glance (5)
  • 6 cups crumbled cornbread, store-bought or made ahead
  • 2 large eggs, beaten
  • 1 1/2 cups chicken broth
  • 2 tbsp diced jalapenos
  • 1 1/2 cups shredded cheddar cheese

Instructions

Layering the Base

  1. Prepare the Base
Arrange the crumbled cornbread into an even layer inside a large rectangular ceramic baking dish. Ensure the pieces are roughly uniform in size to promote even moisture absorption during the baking process. Use your hands to distribute the crumbs carefully, making sure the bottom of the dish is fully covered without packing the crumbs down too tightly.
Look for The cornbread should fill the dish evenly.
Tip Use day-old cornbread for the best texture as it holds its shape better than freshly baked, soft cornbread.

The cornbread should be crumbled into uniform pieces and spread evenly across the bottom of the baking dish. Ensure there are no large clumps that might prevent the liquid from soaking through, and double-check that the corners of the dish are filled properly to ensure consistent baking throughout the entire vessel.

Moistening the Mixture

  1. Combine and Pour
In a separate mixing bowl, whisk together the beaten eggs, chicken broth, and diced jalapenos until fully incorporated. Pour this liquid mixture evenly over the crumbled cornbread in the baking dish. Gently press the bread down slightly with a spoon to ensure every piece of cornbread is thoroughly moistened by the egg and broth mixture.
Look for The liquid should be fully absorbed by the cornbread.
Tip Pour slowly to avoid splashing and to ensure even coverage across the entire surface of the crumbs.

The liquid mixture should be thoroughly whisked so the egg is completely integrated with the broth and jalapenos. As you pour, watch for even saturation across the entire surface of the cornbread.

If you notice any dry spots, use a spoon to gently nudge the liquid into those areas to ensure the entire dish is perfectly seasoned and hydrated.

Baking to Perfection

  1. Top and Bake
Scatter the shredded cheddar cheese thickly over the top of the moistened cornbread mixture. Place the dish into a preheated oven at 375°F (190°C) and bake for approximately 35 minutes until the edges are bubbling and the top is golden brown. To cook the eggs through to a safe temperature, ensure the internal temperature reaches 160°F (71°C). Remove from the oven and allow to rest for 10 minutes before serving.
Look for The edges should be bubbling and the top golden brown.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Place the baking dish on a rimmed baking sheet to catch any potential drips while baking.

The cheese should form a thick, golden layer across the top. The edges of the dressing should be bubbling with savory juices, and the entire dish should smell fragrant and toasted.

The internal temperature must reach 160°F (71°C), and the center should feel set to the touch rather than liquid, indicating that the eggs have cooked through properly.

Common mistakes

Avoid over-mixing the cornbread when adding the liquid, as this can turn the mixture into a mushy paste rather than a light, airy dressing.

Also, do not skip the resting period after baking; this time allows the moisture to redistribute throughout the dish, making it much easier to scoop and serve without it falling apart on the plate.

How to tell it’s done

The dressing is done when the edges are bubbling and the top is deeply golden brown. The cheese should be fully melted and slightly browned in spots. When tested with a digital thermometer, the center of the dish must reach an internal temperature of 160°F (71°C) to ensure the eggs are fully cooked and safe to eat.
